B. Cooper Barbecue is an easy win if you’re craving real BBQ. The brisket was tender and had a nice smoky flavor without being dry, and the ribs were meaty and cooked right. Sides were solid too, especially the beans. Portions are generous for the price, and the food came out fast. The place feels casual and no-nonsense, and the staff were friendly and efficient. This is the kind of spot you’d come back to without overthinking it.

Blaine roasted a whole turkey for us for a Friendsgiving dinner back in November. I’m a vegetarian, but the turkey smelled amazing (first time I’ve ever said that about a meat dish). Everyone who ate it talked about how delicious it was. The turkey was the star of the show and B. Cooper BBQ did an awesome job. Blaine was also great to work with and made the ordering and pickup process very easy.

The brisket and the ribs were delicious. The potato salad was one of the best ones I’ve ever had in my life. Since it’s simply in a food truck/trailer, it gives off an authentic outdoor BBQ experience similar to a picnic since all seating is located outdoors.

A little hard for us to find, thinking our noses would lead the way, but there were no typical smokehouse BBQ smells wafting on the air this Sunday afternoon.
Once we found the trailer the BBQ was typical BBQ, except for the turkey, it was moist and juicy and smoked. The potato salad was delicious, corn salad was different but refreshing on the hot day. I did not care for the BBQ sauce(vinegar based) but the good thing is, is that it was not needed. I’m planning on coming back once the weather cools down and to try other items from the menu.

The brisket was 80% fat… what wasn’t fat, was really dry. The ribs were very dry. Sausage was dry. There was no elote. There were no homemade pickles. The plates only come with one side. The sandwiches come with no sides. The potato salad was really good. I really wish the food was fresh but given the setup i understand.

This place is always consistent! I’m very impressed with the seasoning and tenderness of the meat. The lamb and brisket are a must try! Delicious potato salad, sauces, crunchy sides. You can easily find parking inside the food truck area. Eat at the tables under the shade and enjoy the peace and quiet this area has to offer.

B Cooper is definitely one of the best BBQ places in central Texas. Wagyu brisket is the star of the show. Buttery, tender, flavorful and it has a good balance of lean and fat. The owner is such a nice guy. I highly recommend this place!

Went 2 B.Coopers Barbecue for lunch with my family. It’s a small spot with lots of seating, the wait was not long and customer service was great! I paid around 60 dollars for 2 big plates of BBQ and a brisket sandwich.

If your looking for some BBQ without the long wait times and lines, this is the place for you.

Warning: The size of the food truck is inversely proportional to the flavors of the BBQ: It’s a tiny food truck, and out of that tiny food truck, comes out gigantic flavors & deliciousness.

I had The Brisket for lunch. Yes. I capitalized the words because it’s THE BRISKET!!!! It’s tender, juicy, packed with flavors, smoked just right, crust on the outside, and you’ll lick your fingers, and it’s amongst the best I ever had. I have been to big names, and they are not in the same league compared with Blaine’s

It’s served with a genuine smile, and your usual sides.

There is no no need to write an encyclopedia about it, just go. If you don’t, it’s because you don’t like BBQ or you’re an idiot. Maybe both.
