We honestly didn’t expect to find such incredible Vietnamese food in Squamish, but Anh Noodle Fusion completely blew us away. From the moment we walked in, we had a good feeling—there was one of the staff’s kid coloring in the corner and you just knew the food was going to be fire.
The standout for us was the spicy noodle soup—a deeply flavorful bowl with just the right amount of heat without overwhelming the palate. The beef brisket and short bone beef were melt-in-your-mouth tender, slow-cooked to perfection, and generously portioned. Every bite was comforting and rich, with layers of flavor.
Anh’s pho was also exceptional. The broth was clean, fragrant, and full of depth, clearly simmered with care and tradition. It struck that perfect balance of savory, aromatic, and light—a rarity even in cities known for their pho.
We also tried the Vietnamese beef stew, which typically comes with baguette, but we asked to have it with noodles instead and was the best choice we made.
Beyond the food, the aesthetic of the restaurant was another highlight. The space is thoughtfully decorated, filled with touches that reflect Vietnamese culture and history.

First time ordering the Vietnamese rice cake (Banh Hoi) and it was a delightful surprise—it’s actually delicate rice noodles pressed into soft bundles with a satisfying chew. My husband ordered the Spicy Hoodle Soup (bun bo) and it was also very delicious.

Spicy beef noodles was very good, served with lots of fresh veggies. The broth was rich and flavorful with the right balance of spice, and the noodles had a nice chew. Lots of tender beef and fresh herbs on top, making it really satisfying.
