Not at all busy on a Friday at noon. Pricey food as one might expect at this hotel. And a pricing mistake on the bill and missing menu option led me to a little downranking. Yummy Croc Monsieur. Tiny little “cheesecake” encased in brittle pistachio shell that kids might like. Lots of lemon topping, tastes more like key lime pie than anything to me.

New restaurant in a new, modern hotel. We enjoyed the service, cocktails, and the fries – and the Hamachi Crudo was the standout. The kids loved the cod. We also had the Bolognese (ok) and the the cauliflower au gratin (pretty good). Parking seems to be relatively non existent so we used valet. Will be back to check out.

I have been to Ajax Tavern several times during business visits to Boulder, and I must say, what a breath of fresh air. The food is amazing, the staff is engaging and the service is phenomenal. A must try burger, butternut squash ravioli and the steak tartare. Also, having been hooked by the truffle fries in their sister property in Aspen, I am pleased to find, I can get the same iconic fries in Boulder which I visit more often. Great new addition to the neighborhood.

Had an amazing business lunch at Ajax. Prime rib dip sandwich was extremely tasty and the pesto aioli popped. The Wagyu burger stole the show. It just melts delicious flavor with every bite. Will definitely be back!

This brand-new restaurant is visually striking, with a stunning, comfortable modern alpine aesthetic. Our dinner was fantastic: the bolognese was clearly home-made and incredibly flavorful, and the drinks menu featured some great cocktails.
The only noticeable flaw was a somewhat slow pace of service. This is typical for a new opening, however, and we expect that as the staff settles into their workflow, the experience will become flawless. Four stars today, with the full five within easy reach. Highly recommended!

I’m definitely no food snob. And maybe it’s my fault for getting the 24$ cheeseburger. But the cheeseburger was three out of 10. The waiters come and go, but ours was the worst we’ve ever had. The food took forever. We had to ask to get the bill. It really looked like a bunch of robots that hated being there. The space however, is beautiful.

It’s a nice space, conveniently located if you work at the university. Google reviews looked good, so I figured it was a safe bet.
The pastrami, though, was a miss. My fault for expecting something fresh and homemade in this setting. What I got was dried-out deli meat—thin on meat, very heavy on thousand island, a little kraut, and a slice of cold cheese that somehow resisted melting despite what must’ve been 20 minutes under a heat lamp. The bread absorbed all the warmth, crumbling into an oversized croutons by the time it reached the table.
The fries were cold. The Beaujolais had been open too long. The “decaf” espresso wasn’t decaf—I’m still bouncing off the walls. And the check was wrong, overcharging me for the pleasure.
The silver lining? The whole ordeal only took two hours.

Notified Ajax of celiac disease before I came. When I sat down I notified server again and questioned what was safe on menu. Server proceeds to tell me that the fryer is “gluten friendly.” I further inquire to find out it’s cross contaminated and not safe. I told the server that that term might mislead someone with celiac. I move on and order. I inquire about the peppers being safe. She says they are celiac safe. Peppers come to the table, I inquire again if they are safe. She reassures me they are safe. Thankfully I hadn’t eaten one yet when she casually saunters over to the table and notifies me that they were fried in the contaminated fryer. She walks away without offering a refund or taking them away. I go to the front desk and ask for a new server. To note… if I consume gluten, I end up in the ER and am sick for months (this is why I only eat at higher end places, for safety). At the desk a very nice server immediately takes our table and makes sure my food is safe (his name was Cole or Colton I think – he was lovely). As we left, the initial server stared us down in anger. I also found out that the Ajax manager was standing at the reception desk when I complained and she never said a word. A customary response is to assure food safety and improve server education. I understand one mistake but compounding issues with safety, attitude and management point to a significant problem. I won’t be back.
Update: I’m moving my review to two stars. I called the hotel and they refunded the entire meal. I’m grateful for that gesture. One more star earned for the front desk manager. Thank you.

Food is awesome! We’ve been here a few times and love it. The atmosphere is great, especially on game days it’s a good mix of energy without being too noisy or overwhelming. Excited to check it out in the summer too
