Born in Havana, Cuba, raised in Miami Beach, Florida, and Los Angeles, California, some of Chef Noel’s earliest and best memories are of spending time in the kitchen, watching his mother cook. When he started his mobile kitchen in 2018, he named it after his mother. Chef Noel is passionate about his Cuban heritage. The day I visited, he served me while dancing to Cuban music, and sharing stories from his childhood.
These photos are from my visit in July 2020. Chef Noel was out of salad, but I ordered everything else on the menu. I tried the Cuban Paella served with Plantains and Rice (10), and the Guava Pastry ($3). This was my first time trying Cuban paella, which has a different flavor profile than Spanish paella. It was a bit bland for my taste. I liked the plantains and rice, but I would have liked it better if I hadn’t also been eating a rice-based entrée. I enjoyed the freshly baked guava pastry. 
Chef Noel serves a number of traditional Cuban dishes. I’m looking forward to trying his Ropa Vieja, Pernil, Picadillo, Lechon, and Flan.
