The 1-star Michelin restaurant will definitely not disappoint you. This restaurant is famous for the steak, which when I tried it, I understood that why it’s so famous. The smell of the steak was a mild wood aroma. The chef cooked meat in perfect ripeness that I prefer. Furthermore, this restaurant is not onlu good at the steak but also good in many plates such as ‘big eye tuna tartare’, ‘bone marrow flan’, and ‘maple glazed pork belly’. Before coming to this restaurant you need to book through call or their website first.

Liked this place a little. Visited the restaurant for the dine L.A. special and was a bit disappointed that I went with the dine L.A. menu instead of the main menu!!! The waiter brought us the steak menu by bringing the steaks themselves on a cart after I finished dinner with the family. Will definitely visit again to try their wagyu!!! Well a little piece anyway.

We came to celebrate Mr. Joy’s birthday with the intention of trying some Japanese wagyu. Needless to say, entering the Beverly Wilshire just feels fancy, practically glitzy. The dining space itself is ultra-modern with rather striking paintings on its walls.

When our waiter showed up at our table, presenting the impressively large array of marbled beef, I was very impressed that they lift these slabs of meat with such ease.

We began nibbling on parmesan sticks and then the bread arrived and kept coming. Gruyere gougeres (cheese puffs), pretzel bread, onion focaccia, and butter of course. I enjoyed all of them, especially the gougeres.

$20 Bone Marrow Flan w/ mushroom marmalade, parsley salad, red wine bordelaise, toasted brioche:
Good! This has got to be one of the most complex bone marrow dishes I have had. The delicate bone marrow flan scoops out smoothly from the bone itself. The bulk of the flavor comes from the mushroom marmalade and red wine sauce. The parsley salad helps cut through the richness. The toasted brioche simply resembled toasted bread with the crusts cut off, but it made for some very nice, fancy toast.

$90 Rib Eye 9 oz. American Wagyu, Snake River Farms, Idaho:
Great! Delicious juicy, pink in the middle, with a quite a bit of char on the outside, forming a very crunchy crust. We ordered the American wagyu as a comparison to the Japanese, and it was clear. American rib eye does pale in comparison.

$25/oz. Rib Eye Japanese Pure Wagyu, Miyazaki Prefecture:
Excellent! The meat is so heavily marbled, it just tastes rich. In fact the fat content probably facilitates the crust that forms on the outside. Inside, the meat is so tender and rich, it practically melts in your mouth.

The beef came with sea salt and a trio of sauces, but they tasted so great on their own, I didn’t see much need to add sauce.

$14 Brussels Sprouts, Sesame Yuzu Aioli, Glazed Shallots:
Good! We did just order these to have some vegetable content on the table. Crunchy and crispy, a little sweet, and wonderfully caramelized. As much as I love Brussels sprouts, they are becoming a ubiquitous side dish, an expensive one at that.

Lastly, we were surprised with a plate of petit fours, including a sesame ball, chocolate truffle, a small almond cake, a small lemon tart with a candle, and ‘Happy Birthday!’ written in chocolate. Mmm I enjoyed each of these desserts.

The food was excellent. However this being my first time trying high-quality Japanese beef, I hope I can be satiated by other steaks again.

Had very high expectations. Tried the sample platter with 3 different steaks. Absolute average, this Restaurant seems to live from its name. Had better steaks at Catch LA and Wallys Beverly Hills. Sides and service however good

Amazing service to match the quality of the drinks and atmosphere. The bar tender, Jeffery, was professional, kind, and attentive.
Provided suggestions when asked and engaged in friendly conversations.
My only complaint is I don’t live in town and have to wait for my next business trip to go back.

My partner and I come here about once a month when we are craving steak. The food is fantastic. Service always impeccable. Environment is laid back and we can always get a table. We tried the main restaurant last year but actually prefer the lounge to it. Highly recommend.

Good steak, excellent service. Cool experience, but I won’t go back. Way too expensive and not a sandbox I can afford to play in…Especially for a steak. Was it a food steak? Yes, but a good steak is good, but it can be only so good. Save your money and eat at providence or Maudes. This is after all just a steak house. It’s for people who have a ton of disposable income. The service was good, but the best was Dylan. Overall excellent experience. Lowest price by the glass wine $26 per glass.

What a superb dining experience for our Valentine’s date at CUT! A Michelin-starred steakhouse that offers premium cuts of beef. We made reservations weeks in advance to ensure we would lock down a prime time slot. The restaurant is located inside the Beverly Hills Wilshire hotel off Rodeo Drive.

The decor of this restaurant is beautiful, the service Is great! The steak Is quality; however the steak was tough & bland. If you are a fan of bland steak without seasoning this is your spot, but for me who likes their meat seasoned and tender I will not be dining here again.

Love this space and the restaurant. Dawn, Sophie, Grant, and Jacquelyn are all fabulous and make cut a world class dining experience. Please work on the quality of the sides, they can be very hit or miss. Steaks are wonderful, I would suggest ordering a little less done than usual, in my experience the kitchen tends to overcook the meat.
