The drinks are great too. Whether it’s a margarita after a long week or something casual on a weeknight, they always deliver. But honestly the staff is what keeps us coming back. They’re friendly, they remember you, and they make you feel like a regular even if it’s your first time in.
You know a restaurant is legit when the local city staff and Celina PD are eating there on the regular. If the people who know this town best keep showing up… that tells you everything you need to know. Fair warning though… if you have a warrant, maybe hit the drive-thru somewhere else.
Celina has grown a ton over the last several years and a lot of restaurants have come and gone. Papa Gallo’s is still standing and still one of our go-to spots. If you’re new to the area and looking for solid Mexican food with great service, this is the place. A Celina original.
We visited as a group of 12, and while a couple of items weren’t quite up to the mark, it was nothing major—completely understandable, as things can happen in a busy kitchen. The drinks, however, were absolutely fantastic.
One thing we really liked was that, despite being a large group, they didn’t add any automatic surcharge like many other restaurants do.
The only downside we experienced was that most of us weren’t very familiar with Mexican cuisine, and the server seemed to rush us while ordering. It made us feel a bit pressured, especially since we weren’t fully sure what we were choosing. We initially thought we might have arrived late, but we were there at 8 PM and the restaurant closes at 10 PM. Still, the server was sweet—just a bit hurried. Because of that, we didn’t tip as much as we normally would.
We’re not reducing any stars, though. We love the small‑town vibe, and it wouldn’t feel right to lower the rating when the food itself was genuinely good. Prices are slightly on the higher side, but not unreasonable.

The queso? Out of this world. Silky, rich, and just the right amount of spice. Add some fresh jalapeños or chorizo if you like to kick it up a notch – either way, you’ll be scraping the bowl clean with their warm chips.
And don’t sleep on the fajitas. Served sizzling (literally – get your camera ready), the aroma alone will turn heads. Juicy strips of steak or chicken paired with grilled onions and peppers, plus fresh tortillas and all the fixings. It’s a build-your-own masterpiece that never disappoints.
The service is warm and welcoming, the atmosphere is relaxed but festive, and there’s a clear pride in everything they bring to the table.
Bottom line: Papa Gallo’s isn’t just a place to eat – it’s a place to celebrate. Great food, great drinks, and great vibes. Come for the enchiladas, stay for the blue margaritas, and leave already planning your next visit.
I went with the latter. Tacos tasted OK. The sautéed vegetables on the side were not good. Oil and an odd frozen squash blend. An afterthought.
I don’t have much else to say. I wish this business well, and if they one day decide to meaningfully cater to vegetarians I will give it another try.
