Ky was our server and he was so attentive, communicative, and kind! loved his presentations and explanations of everything as it was our first time dining here. absolutely will come back and recommend the red oscar as well as the mix. you must save room for dessert!

As parents of a Baylor University student, we’re always looking for spots that feel like a real treat when we visit Waco.

Diamondback’s has become that place for us—hands down our son’s favorite restaurant in town and the perfect break from dorm food. We try to make it down every three months or so, and it never disappoints.

What sets this place apart is the owner, Meghan. She personally oversees every aspect of the operation, from the kitchen to reservation scheduling, and it shows. We had an issue once in getting our table at the exact time we requested with the hostess. Meghan immediately contacted us and apologized and assured us that she would that would be rectified. She certainly kept her promise and each time since, she personally reaches out to us to confirm table reservations. That level of hands-on care from the owner is rare and really makes you feel valued.

The food is everything you’d expect (and hope for) from a top-tier Texas steakhouse. The filet mignon is phenomenal—perfectly cooked medium-rare every time, melt-in-your-mouth tender, and when you add the sautéed mushrooms and that luxurious truffle sauce… it’s next-level delicious.

The sauce brings this beautiful earthy depth that complements the beef without overwhelming it. You absolutely have to try the lobster tail too—just tell your server to prepare it the way the Baylor Basketball team likes it. It’s a fun little insider request and the result is outstanding!

The wine list is impressive and thoughtfully curated, the sides are excellent, and the whole experience feels polished yet warm and approachable.

We usually dine a little later in the evening, and on our last four visits we’ve been lucky enough to have Ky as our server. He is genuinely one of the best waiters we’ve ever had anywhere—super professional, incredibly attentive (drinks never run low, he times his table visits perfectly, reads the table like a pro), and never pushy with upsells, but always happy to share great recommendations. After a few visits he started remembering our names and greeting us like old friends. It’s that kind of personal service that keeps us coming back.

Everything about Diamondback’s—food, service, atmosphere, and ownership—delivers a consistently amazing fine-dining experience. If you’re looking for a special night out in Waco (date night, family celebration, or just treating yourself), this local gem is the one. We highly recommend it and can’t wait for our next visit!

It has been years since we enjoyed a meal like we had tonight. The food (mixed grill and SeaBass) was all cooked perfectly. I was able to cut the filet and venison with my fork. The atmosphere was perfect. We were able to talk without raising our voices. Our waitress Halee knew just when to come over to check on us. Never over bearing and very pleasant. First time going here, but won’t be our last.

We enjoyed a magnificent dining experience at Diamondback’s. The food was fabulous and our waitress, Leah, was amazing!! Very considerate, knowledgeable and enjoyable. We will dine there again, next time our business brings us to the Waco area! We have had as many as 16 people accommodated previously, with rave reviews. This dinner, it was just three of us, but was equally enjoyable!

Came here for the first time with family, we got a special room off to the side where it was quiet. Best part of the experience was our server, Cullen. I had shown up about 20 minutes earlier than the rest of my party, and he took the time to speak with me while I was waiting. He was a fantastic server and I really appreciated how genuine he was. The food was good. A few things to note: the prime rib could have used more seasoning (although it was perfectly cooked), the bread was odd (not normal fluffy bread but crunchy and hollow) and the lobster mac n’ cheese wasn’t really cheesy and didn’t have a ton of seasoning. But the service was great, and everyone enjoyed our time there. Again, huge shoutout to Cullen!

Exceptional!!! We booked a private room for my brother to propose to his girlfriend. (She said yes) The room was beautiful, service was amazing, and the food was delicious! Fried shrimp was my favorite along with their mashed potatoes…cheesecake…chefs kiss! Prime rib was excellent. We love going here!

I went to Diamondbacks in Waco last night with two friends to celebrate my birthday. The hostesses were very sweet when we arrived, and our server was kind and polite. However, the overall service was very poor and the experience did not match the price point.

We were there for about two hours and barely had service for most of that time. We also noticed other tables being shown boards with the different steak cuts and having them explained by their servers, which never happened for us.

The steak itself was bland and lacked flavor, and the sides were subpar. We were told a birthday dessert would be brought out, but it never came, which was especially disappointing since this was meant to be a special celebration.

Honestly, the only standout part of the meal was the bread and butter, which were phenomenal. Unfortunately, everything else fell far below my expectations for an establishment like this, and I left feeling really sad that my birthday dinner was not the experience I had hoped for.

Addie T was our server and couldn’t be more delightful! Made excellent recommendations and everything was delicious! We enjoyed the Downtown Waco sushi as an app. Off menu filet and ribeye were cooked perfectly and seasoned just right. The bartender suggested a local whiskey that my husband really liked and a red wine that went great with my steak. I was able to add the burrata to my filet and it was also very good. No complaints. Quiet and well appointed dining area in historic building with charming touches. Would definitely recommend to anyone looking for a nice dining experience. Walking distance from Hilton.

Amazing service, cozy vibe, and a hidden gem on the menu!
DiamondBack’s was an awesome experience from start to finish. The staff was super friendly and made us feel right at home. The atmosphere is warm, elegant, and perfect for a special night out.

But the real star? The Fried Lobster! It’s not on the menu, but if you ask for it—you’re in for a treat. Crispy, flavorful, and absolutely delicious. Highly recommend giving it a try if you’re in Waco!

Went last night for my sister’s birthday dinner, & ended up being very disappointed. The hostesses were nice but that’s about it. Our server hardly came to check on us & the food was meh. Definitely expected more for a $200 dinner mind you. Probably won’t be going back
