In November 2014, award-winning Chef Hosea Rosenberg evolved his esteemed Boulder, CO catering business, with a food truck and farm, into a long awaited, brick-and-mortar restaurant, Blackbelly. The eatery was quickly identified as a Boulder essential, and elite dining destination in Colorado. Its immediate popularity triggered an expansion just over a year later, with Blackbelly Butcher and Market: Boulder’s only whole animal, artisanal butcher shop and first independent retailer licensed to make and sell its own cured and fermented meats. Blackbelly is our favorite restaurant in Boulder and this visit was excellent from start to finish. The housemade focaccia and seeded sourdough with butter and vegetable ash salt were fantastic, and the marinated olives were bright and flavorful. The grilled sprouting broccoli with anchovy vinaigrette and Aleppo had great char and depth, and the confit mushrooms with spigarello and chile oil were rich and earthy. The roasted half chicken was tender and comforting, and the Denver steak (medium rare) was perfectly cooked with a silky demi-glace and piquillo pepper chimichurri. Everything paired beautifully with a glass of Sangiovese. Service was warm and attentive, the atmosphere relaxed and comfortable. Highly recommend.

We couldn’t decide what to order and asked the staff for recommendations. The top suggestion was the pig ears—we decided to be adventurous and gave them a try, and they were incredible! For dinner, I went with the lamb, my husband chose the Delmonico steak, and we shared a side of broccoli. Every dish was delicious. Sitting at the chef’s counter was a highlight, too—we loved watching all the action in the kitchen. Highly recommend for both the food and the lively, interactive experience!

I brought my family to Blackbelly Market and Restaurant to try something new, and we were not disappointed. The atmosphere is warm and inviting, with beautiful bar seating and open table seating throughout. If you’re looking for a very private or intimate dining experience, this may not be the ideal spot, as tables are fairly close together, but it wasn’t an issue for us and is simply something to be aware of.

The wait staff was extremely friendly and helpful. Everyone seemed to work well together and genuinely enjoy what they do, which always makes for a great dining experience.

We ordered a variety of drinks like wine, an Old Fashioned, and beer and all were well prepared and enjoyable. Pricing felt very fair, especially considering current drink prices.

For our main dishes, we ordered the chicken, short rib pasta, and burgers. Everything was well seasoned and full of flavor. We did have a small hiccup with the chicken dish, but it was handled promptly, which speaks volumes about their customer service.

Portions were well balanced and satisfying without being excessive, with just enough left over to take a bite or two home. I also loved that they offer a seasonal menu; it makes the experience feel thoughtful and special. The dishware itself is high-quality and upscale, adding to the overall presentation.

We truly enjoyed our visit and left happy and full. Blackbelly is definitely worth checking out.

Really just an all around wonderful dining experience. Myself and my team spent a week in Boulder. We all agreed this was our favorite restaurant ️ and we visited some really good places . The overall ambiance is wonderful with a locker of meat showing . The bar in the back was very quaint . The star of the show was the food for sure. Excellent flavors. Everything cooked just perfectly. The service was on point and very well done. I had some very delicious scallops. I know it might be odd to order at a beef place, but they were excellent and I was in the mood for some. Very moist and delicious. Not cooked too long. Just an excellent dish. We had several appetizers, an amazing bread and a wonderful beef tartar. The menu even satisfied our vegetarian team member. I assure you you will enjoy this place for its food and everything else.

Flawless presentation, impeccable service, and exquisite flavors. Pretty much everything you want when you make a dinner reservation. Came into town from Austin with my daughter and sat at the chef’s bar which was a great experience for her to see the behind the scenes magic that goes into the details of executing a perfect plate. Cannot recommend dinner at Blackbelly more…a true gem.

The service was attentive. While the steak was prepared perfectly, the $75 price tag felt a bit steep. I found the starters to be somewhat underwhelming, but overall, it was a satisfying experience.

Just fine. Was it bad? No. Was it overly flavorful and beckoning for me to return? No. Got the Bahn Mi and the Wagyu Beef sandwich. The wagyu was pretty forgettable and the bahn mi wasn’t too much better. Forgot the soup and had to remind them when the food was dropped off (no big deal). But, the flavor of the food doesn’t align with the cost. There are other $17 sub sandwiches that I’d choose over blackbelly.

Outstanding food, delicious dishes, good service. Tables are rather small and positioned way too close together, noise level was quite high. Wine prices are rather high: steak, lamb and pork dishes were outstanding. Focaccia was great, fresh and warm, just pieces of it were humongous, so we had to break them apart ourselves. Tip of 6% for kitchen was included on the bill.

My sister recommended Blackbelly and so glad she did. We stopped in at an odd time and were able to sit at the bar. Both bartenders were great. So friendly, passionate about their craft and the restaurant, and made great drinks.

Onto the food. We started with the focaccia and seeded sourdough. OMG – some of the best bread and butter I have had. Ever. The focaccia had a perfect crispy crust with a light interior and the right amount of wonderful olive oil on it. Wow. Then the seeded sourdough. Great deep sourdough flavor with a perfect crust, and the seeds were a great flavor addition. I love bread and appreciate a great butter and this was it!

We also had the ricotta and preserves. Kind of simple yet delicious and a great mix of flavors. Almost decadent. Sadly we didn’t save much room for the burger and raw veggies with dip but did our best. The veggie plate was beautiful and full of unique and tasty veggies. Light yet satisfying. The burger was good but they had me at confit garlic in the fries. What wonderful nuggets of goodness!!

We definitely enjoyed our meal and will be back for more!
