On our travels to Charleston, we made a pit stop in Columbia only to see on a billboard that the annual Jubilee Festival of African American Culture was happening that day. We enjoyed our half day there, and I came across this food truck with the best fried gizzards. The gentleman making my order struck up a little conversation in the weather (it was blazing hot) and gave me a great heaping order, which turned into two meals. Gizzards are an acquired taste, and these were crispy and succulent with the right amount of salt.
