It is hard to describe Asador Etxebarri without sounding excessive, but the truth is simple. It is the best restaurant in the world. And not just by title. It actually deserves it, every single inch of it.
The setting itself already tells you something extraordinary is about to happen. The drive through the Basque mountains, the clean and crisp air, the quiet beauty of the landscape. It all feels like a prelude to perfection. Then you arrive at this humble stone house, perched between green slopes and open sky, and everything falls into place.
The service is impeccable, precise, calm and genuinely warm. The sommelier is, without hesitation, the best I have ever met. His sense of timing, his understanding of wine and his ability to translate it into emotion are on another level entirely. The cellar is remarkable, the conservation flawless, the wine temperature always exactly right. It feels as if every bottle has been waiting its whole life for that exact moment to be opened.
And then the food. You come for the grill, but you leave understanding that grilling here is closer to poetry than cooking. Every ingredient tastes of itself. Fire is used only to reveal, never to dominate. It is purity, simplicity and mastery all at once.
Honestly, I cannot think of a better place on earth to sit back, breathe the mountain air and experience what might very well be the best meal of your life.

Never easy to get a reservation but worth the effort. The restaurant lies in a beautiful countryside location surrounded by green mountains. The building itself in stone is rustic but charming. The food is honest, well portioned, extremely produce centric, and fully leveraging the chef’s mastery of the grill, with little extra interventions. A truly memorable gastronomic experience. Probably the best besugo I have ever had.

Definitely not, Google reviews should be based on once you visit. Otherwise I can leave a review to God that there is a traffic to the heaven, but I haven’t been yet. For those who can wait and appreciate the craft of cooking on open fire, this is your place. Victor over the year has crafted how to cook simple dishes with perfection. Ambience is perfect and relaxing, not rushed. Mohamed – sommelier knows his game, every bottle he suggested perfectly paired with the food. This is one of the best trstaurants in the world and absolutely deserve it. The food is heaven, wine choice is like… also heaven, service is warm and you feel very welcome, family style even if you are in the iconic place. Chef is amazing, the steak is one of the best (or might be actually the best) i tried. Of cource hard to get a table. But really worse it! There is not enough stars on this scale to rate Etxtebarri. It’s truly unique and unforgettable experience. Everything is perfect. The food has so much taste! In theory everything here is simple – prawns, beef chop, Red Sea bream. In reality, every produce is first carefully selected and the prepared in a master way. Char grill aroma adds to the flavors. Wines are also great and the sommelier’s advice very spot on. It’s so hard to make a reservation here and no wonder. Everyone wants to eat here and experience it. Stunning.
