There are restaurants that serve food, and then there are restaurants that serve identity pieces of history folded into plates, poured into glasses, and anchored deep into the culture of the place they stand in.
Penrose Taphouse & Eatery belongs firmly in the second category.

Named after Spencer Penrose, the entrepreneur, the risk-taker, the firestarter of Colorado’s early identity, this establishment doesn’t just borrow a name it honors a legacy. The man who carved a road up Pikes Peak, sparked industries, created jobs, and literally shaped the terrain of the state… that spirit is alive here. You feel it the moment you step inside.

There’s a quiet electricity in the room a sense that this place was built on the backbone of ambition, of people who weren’t afraid to roll the dice. The atmosphere is warm, grounded, and unpretentious.
A chill vibe with a pulse.

And then comes the service led, on this visit, by Ella.

Ella is one of those rare servers who doesn’t just take orders; she commands the experience. Her pace? Fast, efficient. Her precision? Sharp. Her hospitality? Effortless. There’s a grace to the way she moves, a confidence that says she knows the room, she knows the food, and she knows exactly how to make you feel taken care of.

The kind of service that makes you stop and think,
“Damn… this is how it’s supposed to be.”

Now, let’s talk about the food because Penrose doesn’t play safe.

⭐ The Goat Burger

This isn’t just a burger; this is a statement.
Cooked to peak complexity layers of richness, savor, and depth stacked neatly between buns that actually hold their integrity. It’s bold without being obnoxious, refined without losing that satisfying punch that a great burger should have.

The old fashion was absolutely Perfect! Created eitj craftsmanship and precision.

A dish Spencer Penrose himself would’ve respected daring, different, unapologetically flavorful.

⭐ The Nachos

Divine.
A chaotic masterpiece that still somehow keeps its composure.
Crisp chips, generous toppings, balanced heat, and enough cleverness in the build to keep you going back for “just one more bite” until you realize the plate is gone.

This kitchen knows exactly what it’s doing.

Penrose Taphouse & Eatery is more than a spot to grab a bite — it’s a celebration of the pioneering energy that built Colorado. A relaxed environment where you can sit back, take in the history hanging invisibly in the air, and enjoy food crafted with skill and pride.

If you want:

a chill vibe,

amazing food,

service that hits every mark,

and a place that honors the spirit of a Colorado legend…

Penrose is your place.

A gem with roots, muscle, and heart.

I went to Penrose for the first time with a group of colleagues last week. Every dish they put on the table looked 10/10 and we all loved it. Really, every table I walked by, the food looked fantastic. I didn’t think I was going to be able to finish my whole salad but somehow I found the room because it was so uniquely delicious! Can’t wait to bring my husband here and have him try the Blackened Prime Rib Sandwich.

Stopped in here because I saw them online and the food looked really good. My husband had the fish and chips. My daughter and I both had a burger with goat cheese and bacon jam on it. I also got a side of mac and cheese. My granddaughter had the kids meal that had chicken tenders, mac and cheese, and ice cream for dessert. Everything was really delicious.

Great food, beer, and service! We were a party of 10( 9 adults and a teenager) everything was delicious. We ordered 3 appetizers( fried pickles, buffalo dip, and artichoke dip)to share and it was more than enough. I ordered the Salmon everything on my plate was fabulous in taste and in presentation my husband ordered the bone in pork chop he gave it a , he enjoyed the mushroom sauce smothered on chop. Thanks for the great service, we’re looking forward to returning soon.

Not the best experience i’ve had at a restaurant. There were flies all over our table. Really nice server, but the taco salad was not as good as I was expecting. The chicken was cold and I was expecting ground beef. I think you’ll have better options around that general area.

When we arrived there were maybe 4 other tables and it took over an hour to get our food. Drinks took forever too. We had to ask where our food was. When it finally came the burger was raw. We ordered it medium but there is a big difference between medium and cold raw beef. The manager did compensate for the issues which was appreciated, but too many issues happened.

I have been to Penrose many times and had many wonderful experiences. The food is always great and service has been great until my most recent visit. I went with a group of three including me to watch a broncos game. We walked in and asked the host if we could sit over by the bar. She said yes and we walked over and sat at a high top right next to the bar. A server came up and asked if we wanted waters for now and we said that was great. We sat there for about 15-20 minutes with no service after getting waters. Other customers were being helped but we could not get the servers attention to order a drink after a few tries. I went up to the hostess, told her we had not been helped, and asked if we were allowed to be sitting at the high top and she told me it was not technically open seating but that that was okay since it wasn’t busy. I asked if it was okay to move to the skinny table in the middle of the walkway and she said yes. So we moved and we overheard the bartender working say she didn’t want another table and gave us to our original server. We grabbed our IDs and had them on the table to order a drink and we were still never helped. We were walked past many times while being ignored, and other customers who had come in after us already had drinks. We saw the server, bartender, and other employees stare and glance at us while talking about us. After being there for about 30 minutes with no service we decided to leave. After having such good experiences at Penrose in the past this was quite disappointing.

Just a great place to go. The menu has so many different options that I want to try them all.

Bomb diggty hamburger was amazing, fries are spot on with taste and crispness, was not a huge fan of the Elote Loster roll but the drinks and food were flavorful and amazing.

Service Melanie was spot on and truly terrific.
Had great opinions on food choices and drinks.

Will be back for sure.

We went for a nice lunch, but unexpectedly there was a large group of families with small children coming in that took over a large portion of the restaurant corner. The noise level was pretty crazy.
I would recommend the Reuben sandwich with tots, but would definitely not recommend the taco salad. The taco salad was a real disappointment.
