The birria tacos are, without question, the best I’ve ever had. Tender, juicy meat that practically melts in your mouth, bathed in a rich, deeply flavored consomé that’s layered with spice and soul. Dipping each bite into that consomé felt like a religious experience – perfectly balanced, not too salty, with just the right kick of chile. My wife and I looked at each other after the first bite and just said, “Wow.”
And then came the cornbread. One bite, and I was instantly transported back 24 years to my Abuelas dinner table. Somehow, they’ve captured that exact homemade texture and flavor slightly sweet, with that unmistakable fresh-corn taste that store-bought versions never get right. It was pure nostalgia on a plate, and I almost got emotional eating it.
Everything about this meal screamed authenticity without feeling performative. The flavors are bold yet perfectly balanced, made with obvious care and respect for tradition.
Agavero isn’t just a restaurant – it’s now an official scheduled stop on every future cross-country road trip. If you’re anywhere near this place, do yourself a favor and go. You’ll leave happy, full, and already planning your next visit. Highly, highly recommended.
I took the salad to go since we were in a hurry and I wouldn’t have had to time to eat once I got silverware, went to eat it at home and lost my appetite. There is mold growing on my egg piece.
Overall atmosphere was good, but do not recommend the salad or going when they’re busy because you won’t get good service or what you order.
I spent $140 on takeout and was pretty disappointed with what I received. The chips and salsa came in a very small portion, and the tacos were just a single layer with a tiny wedge of lime. The food was okay—not terrible, but definitely not impressive compared to other restaurants in the St. Louis and Belleville areas. The soup was bland, although it did have a good amount of meat.
The place looks great—they clearly invested a lot in the interior and exterior—but there’s no designated waiting area or even a chair for people picking up takeout.
For the price, I expected better quality and service.
