The Merchant in Palma was honestly a letdown, especially given the reputation and hype around it. We booked our reservation well in advance, only to have it canceled because we did not confirm the day of. This was frustrating since we were on vacation, using limited data, and actually trying to enjoy Mallorca instead of constantly checking emails. Expecting guests to reconfirm reservations while traveling feels unreasonable.
What made it worse is that when we arrived, two people right in front of us had no reservation at all and were seated in the garden area. Meanwhile, we were placed in a dark corner inside the restaurant, which immediately felt like an afterthought. It set the tone for the rest of the night.
The food itself did not justify the price. Everything was expensive, but the flavors were underwhelming and nothing stood out. For what you pay, you expect something memorable, and this just was not it. After reading other reviews, the mixed ratings make a lot more sense now. We experienced the same issues others have mentioned, inconsistent service, questionable seating decisions, and prices that do not match the quality.
There are so many great restaurants in Palma that deliver better food and better treatment. Unfortunately, this felt like falling for influencer hype rather than an experience worth repeating.

Incredibly beautiful building worth €5 to sit outside.
Great service professional but not over friendly
Food very disappointing, unseasoned steak, cold fries. No finesse to the plate. Lazy steakhouse menu. Lobster tacos in supermarket shells, oxidised avocado – poor.
Great spot for tourists to experience a lovely palma interior but not many natives in the building says a lot.

The place is amazing with delicious food and friendly staff. The only downside was that the service felt a bit rushed, we barely had time to decide, and the couch was uncomfortably low. I had to use two cushions just to sit at a normal height at the table.

Food was absolutely unreal, my starter was lovely and my steak was amazing. Some lovely wine selection.
The waiter couldn’t be more helpful constantly over asking how we were and if we needed a top up or anything else.
Was our first time in palma as we wanted a nice night out. Would definitely recommend this to anyone going. However we wanted to sit on the rooftop but was not open when we visited which is a shame.
