I was happy to see a place open until 2am. I arrived around 1:05am. There were a couple people in booths but the chairs were all up. I told the cashier I was showing the place is open until 2, and asked if they were still open. “Yes we’re still open.” Great!
I order shrimp tacos. “Sorry sir, we don’t have shrimp right now.” Very well then, cheese nachos. “Sorry, our oven is off, we can’t cook nachos.” Fine. I settled on a veggie quesadilla, chips with roast pepper salsa, and a side of rice.
Right before paying, the cashier extended the barrier across the entrance, effectively closing. I pay, then ask if I can eat my food in a booth. “Sorry sir, we’re closed.” This was 1:11am. There was one customer immediately before me and from what I recall, two behind me. I really didn’t want to return to my hotel room to eat, but that’s what I did.
My quesadilla was passable. I was satiated, but it was bitter with spite. The rice had a heavy metallic taste and I did not finish it. The chips and salsa were decent.
I do not recommend this establishment to anyone looking for a late night bite after 1am, or with the expectation of reasonable customer service.

Simple place that’s been there for years and years. Food is always solid, and like the name says: it’s fresh!!! We usually get either the burritos with cheese and chicken or the quesadilla plate. The salsa bar is amazing with a huge variety of salsa options. The place itself is inside the Excalibur casino so it’s nothing special but the food is about $13-$16 per person and it’s VERY filling. We usually come every trip out to Vegas.

It has been awhile since I had a Baja burrito. Overall I liked it but it feel apart really quickly. I don’t like beans so they made sure I didn’t have that. I would get another one.

When today noon I had veg bowl it was really good and that’s why I prefer to eat now.. lunch time ladies were very nice and helpful.. just now the guy who was making was so annoying and the way he talked was rude.. just nonsense

This is become one of my favorite fast food takeouts incredibly fresh meats vegetables salsas and the manager that runs the one that’s in Excalibur she does an incredibly professional job of any manager she is so sweet and humble that if other places had management like her they’d be the best restaurant in town their staff is incredible including the staff who work the grill and counter she is like a proud mama who has raised doctors they’re all incredibly talented people and good at their job at Baja fresh I wish we had one in my side of town

The most stingy fast food I have ever eaten. They are so selfish with the serving sizes. This is why Chipotle is so much better. I tried Baja Fresh for first time and will never go back. Had to add $3.00 guacamole just to make sure I had anything close to enough food.

I needed a high-protein meal with no carbs. So, I tried this establishment. I ordered a Chicken Fajita plate with Queso on the side. While the chicken lacked flavor it was still moist and everything else was phenomenal. The portion size is huge. I asked to have smaller portions scooped. The beans were delicate and fully seasoned. The grilled veggies also had a robust flavor and a great bite that wasn’t soggy or slimy. I didn’t eat the rice nor get tortillas but the chips and queso were delicious. It’s very comparable to Moe’s or Qdoba but the sauces were amazing. Y’all know I love a good sauce. The sauces were robust. I wish I took a picture. I would say give them a try if you love Mexican.

Best food in vegas. Better than most sit-downs. If your coming from Luxor get off monorail at excalibur walk straight in straight back to back of casino. Its easy to find. Good prices good portions. Secret gem. 13.50 for steak fajitas

Dined here late night after an event at the MGM Grand. Glad it was open.
The line was long but their staff moved it along quickly.
Food was filling though a bit pricey. But when you’re hungry and don’t have anywhere else to go, it’s a solid option.
Kids meal was good for my son.
My burrito was flavorful and just the right amount of food I needed.
I wouldn’t hesitate to dine here again.
