In 1950, with a $500 loan from his father, Bill Miller opened a small poultry and egg business. Three years later Bill Miller Bar-B-Q began as a small fried chicken-to-go restaurant. Today Bill Miller is a family owned and operated business with 77 locations in the San Antonio, Austin, Corpus Christi and surrounding areas. We take pride in cooking all our barbecued meats in pits smoked with 100% live oak wood. We offer a variety of meats such as brisket, sausage, bar-b-q chicken, pork spareribs, turkey and fried chicken. We specialize in the baking of breads and pies made fresh daily. Long Live the old Bill Millers! It’s true….the old Bill Millers was better. My son and I hit the 35 and Hwy46 location up. The place was pretty dead. Now granted, it was 2p in the afternoon. We only spotted Ava, who was super sweet and polite. She took our order, she checked us out, she even cleaned several other dirty tables after helping us. They were completely out of hash browns, which she also later delivered to our table with a smile.
My Wild Bill sandwich was on the small side; as they now serve them on smaller, less than good buns. (See pic) The rest of the food was pretty tasty.
My son’s one meat (brisket) plate was average and a little fatter than he likes. However, I dig it that way and was not an issue. The temperature of the food was adequate and the green beans were still delicious and on point! My son’s totally loves the (tomato based!?) sauce.
The prices however, are still pretty good I believe. As I’ve eaten out a lot lately and paid a lot more for lesser fast foods.
I just hate seeing a delicious old BBQ staple continue to drop in quality and quantity. And after reading other poor reviews here, I sadly believe they are accurate….

Okay. It was around lunch time and the line was super slow. I guess they don’t have the chicken sandwich (not the fried pattie). I ended up getting tenders. They were cold. The sides bar was also missing. I went to get the vinegar and onion with some pickels at the side table. The white onions tasted like they were soaking in cooking oil – no seasoning. Vinegar was missing. Service was excellent. Food was below average.

I don’t know if it was just a bad day or if it’s normal. But the barbecue chicken was definitely not good. And awfully dry. The rest of the food we had was adequate, not the greatest, not the worst. The staff was very nice in accommodating, and the people who had the fried chicken loved their fried chicken.

This bill killers is trash! Workers are nasty and don’t care-all this establishment cares about is taking advantage of the customers and keeping their monies in whatever way they can get away with! I’ve been a customer for as long as this one has been in New Braunfels but YOU HAVE TAKEN ADVANTAGE OF ME FOR THE LAST TIME!
I HOPE THIS ESTABLISHMENT RUNS EVERYONE OFF AND CLOSES LEAVING THAT SPACE FOR A RESTAURANT WORTH A DAMN

In the new braunfels store they never pay attention to the front counter serving the food they’re always in the back and never around.. I believe bill miller’s employee needs to take a chick.Fil class to learn good customer service.I have told the managers of these stores about that and they look at me like i’m stupid.. Try to keep the worker that are working the counter serving food in that area at all times . And some managers are lazy, they don’t even want to help the people in the front counter when it’s really busy…

I’ve been coming to bill Miller’s for years. To my surprise getting breakfast tacos this morning through the drive through. I realized my first taco was lacking on the ingredients..
Then my second taco.
I realized was even worse on the amount of brisket provided.
It definitely seems as half of my taco went to another customer. This tactic doubles the prophets of restaurants.
But, you know, it also creates a lasting impression for your customers.
Which in the long run will reduce the amount of repeat customers.
So bill Miller saved money this morning. But they will not have repeat customers which will cost them tomorrow.
I am a business owner myself.
You know customers are willing to pay a little more for a better product.
In the long run, we all would be happy with an average portion even at additional cost.
Customers want to feel taken care of and not taking advantage of by your company.
You know, the price went up and the portions went down.
When I pay $3 each taco it Does not have to be huge but decent./ average size.
You want your business to be famous for the service and product they provide.

Don’t know what is happening to Bill Miller’s – service & food in New Braunfels locates is going downhill. A couple of days ago, I ordered the beef stew from the Rucklle Road location. The meat in it was unidentifiable Today, I stopped at their other location at 155 TX 46 New Braunfels. The service & food there was even worse. They had one person working the counter. He was serving & running the register. People were in line waiting to pay. They were low on most of their sides, so they gave us the corner scraps which were very dry. We asked for bread. Were told it needed to be sliced. Come back about 15 min later (we ate in) & asked for it a second time. Still hadn’t been cut. Notice as we were leaving that bread was now available but employee who I’d spoken to about the bread both times never bother to come over & tell us that bread was now available. Not sure why it took them half an hour to slice the bread when they had employees standing around talking & laughing with each other. Food was also terrible. Don’t think I’ll eat at Bill Miller’s anymore.

I had the Beef Brisket sandwich it was tender and delicious. As a side I had wonderful green beans. For dessert I had a taste of Apple Pie, Pecan Pie, and Coconut Cream Pie. The pies are delicious and fabulous. The Customer Service was Excellent, Joseph was friendly and helpful.
