Absolutely LOVED my experience here! The atmosphere was cozy and welcoming, and the staff were incredibly polite. I was served by a blonde-haired male waiter who was so nice. The food was just as impressive, and came out very quick despite the place being busy. The Mango Tango sushi roll was a standout (highly recommend!), and the Ube Cheesecake and Wontons were also phenomenal. I’ll definitely be coming back when I’m in the area!

This place has some of the best sake nigiri I’ve ever had. It was incredibly fresh, flavorful and tender. I ordered 2 at first but had to place another order for 2 after the meal. We had the steamed gyoza as an appetizer and the pork katsu for the main. Both were delicious. However if you only get one thing from this place make sure to try the salmon either in sushi or sashimi form. It was so good. Sadly the kitchen closed while we were eating otherwise we probably would have ordered more. Definitely a restaurant that we will be making another visit to once we return to FWB.

Not busy at all at 3:30. Very good sushi! Tried the crazy roll, Kraken, salmon skin, shrimp tempura. My favorite was the salmon skin. The crazy roll was good but too heavy for me (deep fried) but the kani salad on top of it was really good. Kraken was good but I expected a lot more heat bc it was rated as one of the spiciest. Pretty pricey too. Service was very good though.

SOI Bistro is such a hidden gem in Fort Walton. The atmosphere is cozy and welcoming without trying too hard, and the staff are genuinely friendly.
The sushi was super fresh, and you can tell they really care about presentation too — everything looked amazing. I also tried a couple of their chicken katsu which was crispy and the meat was tender ! I had an order of beef yakisoba topped with an egg and that was good too!
Honestly impressed by the creativity without it being over the top. Great spot whether you’re going out for a casual dinner or a little date night. Definitely one of my new favorites in the area and will be going back!

We came in from out of town to visit family and have a beach day. We had a hankering for sushi afterwards, someone recommended this place so we decided to give it a try. As soon as we walked in, the server didn’t seem happy to greet us. Maybe it was because we were sporting sunburns and beach attire, but she was not happy to serve us. She even hesitated a good 10 minutes before taking our order, and it wasn’t even busy. The atmosphere is nice, casual, but not too nice for beach goers. If you’re business is going to be located 15 minutes from the beach, you should expect to accommodate beach patrons. Anyway, the food was delicious and the other staff was very nice and hospitable. The sushi rolls were phenomenal (not pictured), but the poké bowls were great abs fresh. Fried rice, bomb. Noodles, bomb. Price range as expected for fresh sushi.

This place is amazing!! The quality of the sushi is outstanding. We got the Mango Tango sushi, teriyaki chicken bowl, and the ramen. The ramen was not as tasty as I’ve had before, but it was still decent. The sushi, however, was delicious!!!

OK, hear me out. I have a lot of love for smaller sushi restaurants, but the downside is usually overly utilitarian interiors, little to no music, and an atmosphere that doesn’t make you want to hang out.
Soi, on the other hand, gets it right. The interior feels like a blend of a classic American diner, with comfy banquette booths and padded sushi-bar seating. The music—retro ‘80s and ‘90s classics—adds a fun, relaxed vibe.
Now, the most important part: the food. The menu offers a great variety of Asian cuisine popular in trendy coastal cities, including bao buns, ramen, rice and noodle bowls, and some inventive, unexpected sushi rolls.
Service was excellent—friendly, helpful, and attentive. The place was busy, especially for a Sunday afternoon in early February, which says a lot—locals clearly recognize what a great spot this is.
