MENYA MUSASHI was founded by Takeshi Yamada in 1996. We have 14 ramen restaurants in Japan, with overseas locations in Singapore, Taiwan, China, Malaysia, Indonesia and Ukraine. In November 2018, we opened first US branch in Capitol Hill, Seattle. We offer a variety of dishes, including traditional ramen, vegan ramen, and tsukemen (dipping style ramen), which soup and noodles are served separately. Finally got to try this ramen place. Ordered black ramen (very flavorful but not too overpowering rich), spicy ramen tsukemen – hot noodles ( very well balanced broth and just the right ramen texture). Both ramen were ordered with sides gyoza (just average) and takoyaki (love it) along with side dish chicken nanban. Will definitely go back to try more and suggest to go off hours to avoid long lines. Happy to have this on the east side.

Wasnt planning on trying this place but saw their sign on the street and decided that I haven’t had real ramen for months. I wanted to try something less vanilla, and the server recommended the Hybrid ramen, which is (to my understanding) Garlic, a bit of spice and the pork broth (tonkotsu).

The Ramen:
1) while the bowl is small-ish, but it’s full of food. Other ramen places give big bowl but also containing a lot of soup too
2) Taste: rich in pork broth. I can feel the collagen coming from boiling the bones for hours, and then of course the sauce and garlic. I wasn’t feeling good so my taste buds aren’t that sensitive, but the taste is rich enough to push through and making it tasty

Service: as with every other restaurant and us as human being, there are good days and bad bays. While I can’t say for others experience, but the servers here was extremely attentive – I didn’t even finish my water and they already setting ready to refill it.

That’s why I ordered the croquette. 17 bucks isn’t enough for that level of attentive service, so I made it to 20 with the croquette order.

I came in hungry and feeling I might need some time to digest, and I still haven’t touch the croquette…

Food is amazing. One of the best vegan ramen/broth I’ve ever had! For vegetarians or vegans out here: My bf who eats meat and had the regular red ramen preferred my vegan broth over his! Pretty telling of the taste!

My sister and I came in here for lunch. Both our ramens were great and my sister also got a chicken bao (not pictured). The spicy ramen is like 6.5/10 spicy level. The guy serving us also gave me this fried garlic and chili thing on the side that was soooo bomb.

Came here for the second time and tried the vegan hybrid this time. It was really good, but I still prefer the vegan spicy miso! The waiting time was super quick, less than 5–10 minutes. Definitely coming back again!

Menya Musashi has great interior decoration but it is ultimately a veneer as the ramen itself lacks flavor. I ordered the Black Ramen and the Spicy Tsukemen and both were under-seasoned and under-salted. Service was passable though my party waited an hour for a group of people to clear out from their table and they were still sitting at the table after paying and yapping. I’d prefer if restaurants took a stand against customers who are looking to take up seats for socializing rather than continue to order food and drinks.

Vegan gyozas were excellent! The skin was so delicate and crispy! The spicy vegan curry ramen was good. The vegan hybrid ramen could use more flavor. We got it with extra green onions and a side of crispy garlic which added great texture.
