Vegan Tantanmen what can I say? I was surprised by this amazing food truck! I usually drive by and I was finally able to stop and have a late lunch here. The layers of flavours in the ramen are seriously good!! I can’t wait to try more.
Also, MANY VEGAN OPTIONS!! You have no idea how happy that makes me!
Atmosphere was ok, but it was cold and even with some sun shining over me I was freezing!

I didn’t realize it was a food truck in a parking lot but it was in a good location. There are picnic benches you can sit at although the road traffic is quite noisy. I ordered a large miso ramen with an add on, it was $22 total and I never got the add on. The food was flavorful but over salted, it was overpowering, and I like my food on the saltier side so for me to share this means it was truly too much. Miso itself is very salty so I think there’s a fine line between well seasoned and overdoing it. The tofu was especially salty. I love that the bowl had grilled zucchini. When I started eating and noticed the extra was not in the bowl I couldn’t say anything because the cook had left to walk his dog. When he got back I made him aware and he offered me to put some extra noodles, my leftover broth and the add on in a takeout container, which I unfortunately couldn’t accept because I was camping. We settled with two waters but I was slightly disappointed.

This was truly the best ramen I’ve EVER had and I consider myself a ramen connoisseur We had the vegan green goddess and tantanmen and they did not disappoint. The tare in the ramen is to die for and Michael, the owner was so genuine and passionate. Do not sleep on this incredible food truck! Thinking about it every day from Denver 🙂

This is the best ramen I’ve had in my life. If I ever come in to money, my first step will be to pay this food truck to follow me around and make all of my meals for me. Do not be fooled by the overpriced spots in downtown Salida. They’re not worth it. Get this ramen instead.

Came here since it had a 4.8 rating but I’m really shocked. We got rice bowls since we didn’t want something heavy before a long drive.

The pork, mushroom, and hoisin glaze combination was super salty altogether. The mushrooms were the saltiest and almost inedible. I saw another person’s review who said they love salty food but their meal was a bit too salty for them too. My bf thought his was overly salty and the chicken wasn’t fresh-tasting, it tasted like microwaved chicken.

Definitely disappointing. We ate a few bites and hit the road. I guess the lesson is to only get ramen here, hopefully it’s more flavorful than salted rice.

Delicious ramen!! I ordered a small vegan miso ramen and added mushrooms and an egg. The tofu and zucchini in it were grilled which was unique and yummy. The small was plenty for a meal. Extremely friendly service!

Loved that the bowls and utensils were non-disposable, despite this being a food truck. Impressed by the original idea of mahi mahi fish cakes, but it was too salty. We tried the tonkotsu, green goddess, and miso ramen. Ajitama eggs were perfect. Ramen broth was way too oily/greasy, unfortunately. The spicy chicken meatballs were also overly greasy, texture could be firmer. Room for improvement, but overall very good for the location!

This place is DELICIOUS. Probably the best ramen I’ve ever had, and it was vegetarian! I strongly recommend the vegan tantanmen. The tofu in particular was amazing (totally worth the extra $3 to get extra tofu) but all of it was delicious. We stopped here on a whim on the way back to the Denver area from southern Colorado and it was well worth the short detour. We ordered online and the food was ready. Just a few minutes after we pulled up. We were there in a snowstorm so we had to take it to go (found a local brewery that allows outside food, which I recommend) so I can’t speak to what it would be like to eat on site. But even if it’s just a gravel parking lot, it would be worth it because the food is so good!!!

Absolutely delicious. Had the Tantanmen and was very satisfied with both portion size and taste.

Really didn’t expect to find Ramen this good at a random food truck in Colorado. Very much worth trying if you happen to be in the area.
