The service was fast and the food was quick! The best fajita nachos I have ever had! I removed a few things, and they were just to my liking!
The fried ice cream was just how I like it with the cereal! It has strawberries and chocolate on it!

They just soft opened today (1/2/2025) and we were Customer #1! We’re so excited to have a Pueblo Lindo in Eagle. We had the Pollo en Mole and Combo Fajitas (note: they’re still waiting on their table skillets for the Fajitas). Everything was delicious as usual and service was excellent. We’ll be back frequently!

Can’t say enough good things after the first visit with my husband and 90+YO mom. We were used to the excellent food and service at the Meridian location, and the new Eagle restaurant lived up to our expectations and then some. Mom loved the grilled veggie quesadilla, my steak ranchero and hubby’s #2 chimichanga with shredded beef were amazing! We have leftovers for tonight, the servings were so very generous. We can’t wait to go back! Hope you are around for a very long time. 🙂

I’ve now been to all 3 Pueblo Lindo restaurants and this one is just as great as the others! We usually go to the Meridian location but went to try out this new one in Eagle. We live in Star so this one is a little closer.
I got the enchiladas La Crema and my wife got the enchiladas Jalisco and they were delicious! All of the staff were great and the food came out quickly. We’re from California, (don’t hate lol), and there aren’t many good Mexican restaurants in the treasure valley, but Pueblo Lindo is one of the few that we keep coming back to!
Can’t wait to come back again!

The atmosphere isn’t as fancy as their other 2 restaurants, but it is still very nice. We like how bright it is inside with all the windows.
The food was fantastic – flavorful, just the right amount of spice and the portions were very generous.
We will definitely add it to our “date lunch Friday” list.

We used Pueblo Lindo to cater a retirement party, and Alex was wonderful to work with from start to finish. The taco bar was exceptional—fresh, flavorful, and thoroughly enjoyed by all of our guests. We received numerous compliments on the food and service and would highly recommend Pueblo Lindo for any event.

I came in and ordered takeout at the bar, and had barely finished my pint of beer before the order was ready to go! The service was prompt and polite and the restaurant is clean and well kept.
We ordered the fish tacos, and the tacos al carbon. The food was delicious and not a scrap left on our plates. I can only imagine the dine-in experience would be even better, as the food wouldn’t cool down from driving it home.
I will probably update this review when we get a chance to dine in.

Very casual with great service. Typical Mexican food served hot and fast. Excellent friendly service and quite reasonable prices. Restaurant has a nice vibe. Close to downtown Eagle. Try the seafood enchiladas!

I just cannot stress enough that the most profitable food in the hospitality industry is Mexican cuisine.
To charge a Texan for Salsa is criminal. I wished so badly for this place to be my new lunch spot. And after going there with my friends we had a great experience.
Then I took my girl and they charged us for a second bowl of salsa. We had to practically beg for refills.
This soured the entire experience. So……………….
I wish ya’ll the best in the future.
