Great food and amazing service. We chose to eat outside the fine dining room, and we’re pleasantly surprised by the atmosphere and service provided. Food was top notch, dessert was even better. The knowledge of wait staff of wine pairings as well as suggesting appetizers to pair nicely with our meals was outstanding.

My husband and I came to celebrate his birthday. First off our server Christina made the whole experience phenomenal. My husband is a character and she just laughed and cut up with him. It was truly great. The food was phenomenal and so was dessert. We had the calamari, lobster bisque, ceasar salad, 8oz filets, burgundy mushrooms, au gratin potatoes, and souffle. We will definitely return and will absolutely request Christina from now on.

Excellent dining experience. The service was personal and our server made us feel special. The sea bass was perfect along with the lobster bisque. The best part of the experience was the mid century modern atmosphere with perfect understated music and ambiance. The fresh bread and butter was phenomenal. The only negative pointcan was that the salmon (medium) was over cooked and dry. Otherwise it was a perfect experience. They had a great cocktail selection and make sure you feel like you can relax and linger in the evening with them.

First time visit. The location in the hotel is a bit confusing as you walk in the hotel but go out by pool and walk around to the restaurant. We weren’t sure we were going the correct way. But it’s worth it as you walk in. It’s a lovely atmosphere. They have some nice half circle booths & regular tables with very comfortable chairs. We waited a few minutes for a server but not too long. Service was very personable. We had the house salad & shared the wedge. We mentioned we would share the wedge & server offered to split. Didn’t mention they would charge $3 to do so. I personally feel charging $3 to split a salad is nickel and diming patrons but oh well. For main course, we had 8oz filet with mushroom sauce, ribeye, stuffed flounder & grilled chicken. They don’t have chicken on the menu but one of our guests in on a special diet so they kindly accommodated. We also ordered the brussel sprouts. All the food was delicious. Our server was so nice. If I could recommend one thing, more one on one service to tables. The servers seemed too stretched. Even the back waiters. When you’re spending as much on a meal as you are here, one should never have to ask for more water or anything else. I’m not giving our server less than 5 because we feel he did his best.

We made a reservation at 7:30 P.M. on July 16th, 2022. When we got there we were arranged to sit at a table close by to the bar. We started off by drinking water. My brother tried the Manhattan, it had Vermouth, Bourbon and not sure what else, but when it came in the glass it was literally smoking in the glass and came around $12-$13. I got the New Orleans BBQ Shrimp Appetizer which was $19, which came with around 5-6 shrimp garnished with 4 pieces of garlic bread. The sauce the shrimp and garlic bread were put in had some kind of wine that really accentuated the flavor of the shrimp. It paired quite nicely. My brother got the Lobster Bisque and it was definitely worth the price for it. It would probably be nice to go back just to enjoy the soup to be honest. We then had a main course of 8 oz Center Steak Filets that came at around $48 each; I got it medium well, and my brother got it medium, and it was one of the tenderest steaks I’ve ever tried in my life. Finally to finish off, even though we stayed a little past closing time, we ate a Luxardo Cheesecake that was very well presented. My brother and I enjoyed every minute of it. The atmosphere of the place wafted with the hints of classy jazz you could take a special someone to. A great place to talk business, for a 3rd date (to take it up a notch), or to get your wife in the mood. Our waitress was wonderful, had an exciting and positive vibe, and knew what she was doing. Because my brother and I work a lot, it is very hard for us to find time for vacations (he has PTO and I don’t), so we felt this was the best way to spend our time this year for the summer. It is definitely a beautiful experience and hopefully I get to enjoy something similar to it again before I meet my heavenly maker. I want to thank the Fredonia Hotel and the Republic of Fredonia Steakhouse for a great night out of the house and for taking the time to care.

We called 2/3 days in advance for a reservation.was told all full.but a server spoke to me about sitting in the bar area.did not make it clear that meant a actual bar(where you can watch them clean the dirty glasses&prepare drinks) why anybody would wanna come to spend $200 and possibly more to see that? so we thought OK bar area got dressed up,it was my birthday,drove 130 miles round-trip. We get over there and they tell me I can go sit down,while my husband parks the car. so I do I go to one of the tables. now these are tables that are in the bar area and I’m told that I need to get up because that’s not where they meant. They meant at the BAR!I don’t think so. I walked out. The hostesses were rude. No one’s apologized. I will never walk through their door again, even if the meal was free!

Valentines 23 at The Republic- food was fantastic of course! Steak was so tender and the Lobster Mac is wonderful – the asparagus was so very good! However I have to say- we have been to The Republic several times, last night was the worst service as far as our waitress. She was MIA, I had to ask other waitresses for things- now ordinarily I wouldn’t think so much of it..but when I’m dropping over $300 on Dinner I expect a certain level of attention. I also expect if you want your gratuity you have to earn it! We will definitely return for another great meal- I will definitely request a different waitress.

Always Fantastic!! A Marilyn is a must from behind the bar, and by all means you must have the lobster bisque or lump crab or BBQ shrimp WOW!! We always look forward to our next visit! We are always treated wonderfully from start to finish, makes the wait for Reservations so worth it!!

I’ll mention some other things that are not steak, but I’m giving this place five stars for the steak itself and top notch service. Have I had better steaks for less? Yes I have. But still…
First out was high quality sourdough bread served with room temperature real butter, thank God! The bread reminded me of the amazing sourdough bread that is sold at the real time bread store in Lufkin. Top notch!
I got the lobster bisque. The bisque was very thick and had pretty good flavor with a fair amount of what tasted like grilled chunks of lobster meat. It was the cup and costed $13. It was a small but filling portion. The wife got French onion soup that had about a 1/4 of an inch thick cheese and tomato cap. No worries, it came with a small pair of scissors to cut through it. The flavor was good to very good but had a lot of bread stuffed inside. Maybe that’s how the French do it? ‍♂️
Served with our steak was a family-sized/style Caesar salad with Fredonia’s awesome cornbread croutons. Salad was pretty good and fresh.
We shared the 16oz. ribeye which, due to the fat content, was MORE than enough. I ordered medium rare and believe it or not, that’s how it was served. That is the most important part of all this. The fat was extremely flavorful and rendered perfectly as we ate. The meat flavor was high quality, just not quite as high as, say, a Hassell Cattle Company steak. Was it worth $60? I dunno. Either way, zero complaints about the steak itself. Service was on point and you even get to choose your own Laguiole steak knife!

My wife and I had a wonderful meal there while on an overnight stay in Nacadoches. The French Onion soup is about as good as you will find anywhere. The steaks are cooked properly and well seasoned. I had the blue cheese bacon butter on my steak. It was a nice addition. The wines by the glass are moderately priced and good value. My wife had the Argentinian Malbec. It had good flavor and aroma.

The dining room is very understated. You would not expect to find it in a college town.

The only downside was some men there thought it was ok to wear cowboy hats and caps at the tables. Apparently their manners are some what lacking.
