We started with the Ebi Fry, perfectly crispy deep-fried shrimp with a light, crunchy coating and a great tartar sauce that didn’t overpower the shrimp at all. Fresh, hot, and addictive (we took the picture halfway through it)
For ramen, we had both the Hakata Tonkotsu and the Classic Chicken Ramen, and WOW.
The tonkotsu broth was rich, silky, and deeply flavorful without being heavy or greasy; exactly how a slow-simmered pork bone broth should be. The chashu was tender, the ajitama egg was cooked perfectly, and the black garlic oil added a beautiful depth. Every topping felt intentional and high quality.
The chicken ramen was just as impressive, clean, comforting, and packed with flavor. The broth was incredibly smooth, the chicken was juicy, and the fresh vegetables and seafood oil brought everything together in a really balanced way. Nothing was overpowering, just pure, well-crafted ramen.
What really stood out is how fresh and authentic everything tasted. I’ve had a lot of ramen in different states (including New York City where I used to live) and Toyo Ramen easily holds its own. This is the kind of place you’d expect to find in a major food city.
The decor is lovely too, warm, modern, and thoughtfully designed. You genuinely feel transported the moment you walk in. Des Moines Metro absolutely needed and deserved a place like this. Toyo Ramen is a must-visit and will definitely be a regular stop for us.
Classic Chicken Ramen, Toyo Spicy Beef Ramen, and Hakata Tonkotsu Ramen
Stopped in after seeing they are now open, I believe they just opened within the week. The Tonkotsu ramen was quite good. The both could have a bit more flavor but overall it was good and better than most you will find in Iowa. I was a bit disappointed to notice the Gyoza was prepackaged and not house made.
I was also a bit surprised I was charged $1.95 for tap water (edit: owner says this was a mistake and not the norm). Ordering and service was a bit confusing. Seems like a restaurant you would have a waiter but you order at the front and pay ahead. No issues, but would have been helpful to be told that when walking in as it’s a new place. I also did not know if you were to leave your tray and dishes at the table so I put them in the cart they had with other dirty dishes. Again, not an issue but some guidance would have helped.
I think with some small improvements this could be a great place. I will come back and overall I recommend it.
