Swung by on a Thursday night for a quick solo meal between destinations. Tables had some action and I chose to sit at the not too crowded bar. Everyone of the staff greeted me positively and genuinely. The bartender Faith was welcoming, courteous and just the right amount of chatty, as well as conscious of keeping her bar neat and tidy whenever there was downtime.
Beer was cold and the food came out quickly. Ribs were cooked well with a nice smoky bbq sauce that was pleasantly not too sweet. I always judge places by the effort they put into their sides. Instead of mushy frozen beans you get at too many BbQ joints, here the green beans here were freshly prepared with a good bite and seasoned nicely with garlic. The creamy mac and cheese was what it should be, nice and creamy with browned bits on top, but had more depth than a lot of places go for…perfect for kids and adults alike. The pickled veg was a nice added touch to the platter.
Food aside, I thought the staff had a great attitude and it was a really pleasant experience overall. I hope they succeed here and I’d be happy to swing by again next time I am in town. Give it a try!

Quiet and minimalist, Bib’s Ribs has a great bar with solid bartenders, quality food, and a truly pleasant and helpful staff.
My friend and I were Jacob’s second table ever in his fledgling career as a server and he could care of us in solid fashion.
My friend ordered the chicken skewers, which already became her favorite dish since this was her second visit in a week. She also loves the corn.
I ordered a half-rack of ribs with the vinegar-centric barbecue sauce. Admittedly, since the owners ran Garlic in Stroudsburg, I feared they would continue to be heavy-handed with the sugar but that wasn’t the case. There was a bit of sweetness to the collard greens. Though that did not ruin the side, I prefer the bitterness and its accompanying minerals. The broccoli, as well as the pickles and pickled onions were solid.
The drink prices are high for reasons unknown, but my martini was perfect. As for the meal, the amount of food was just enough.
I look forward to returning with my girlfriend to try their grilled salmon.

Tried them out tonight for the first time.
The food and drinks were somewhat pricey but pretty good.
My burger was tasty and I really like the sauces they used on it. Everything tasted fresh as well.
Only thing against the food was the fact I asked for med rare burger and it most certainly was over cooked to med well.
They are still new so I will go back and try again.
Staff was also very friendly.

Walking in, the atmosphere and vibe was so cool!! They had so many different options on the menu and I just wanted to try everything. The brisket I got was phenomenal (the Kansas City BBQ and the Smokehouse sauces wow!) And don’t even get me started on the cornbread. If you’re in the area, this is definitely the place to stop and eat!

Between our waiter, Will, and all the other staff that attended to us everything racked up to a 5 stars. Every detail is thought about from the second the door gets opened for you. We tried the brisket nachos for our appetizer. There was three of us and we each ordered something different and split. I got the pulled pork sandwich. It was delicious, especially the tallow fries. My son got the burnt ends with Mac and cheese and charred broccoli. The broccoli was my favorite! My husband got the 1/2 rack with corn bread and corn ribs. I could’ve eaten a whole pan of the cornbread! The prices were great for the quality and portion. The service was excellent. She was attentive, great at explaining the different sauces, suggesting a cocktail. Our appetizer was finished as we got our meal. We will definitely be back to try more items on the menu, but for the first time this was a great start.

I had an absolutely amazing experience at Bib’s Ribs, and a big part of that was thanks to our incredible waitress Star. From the moment we sat down, she made us feel completely welcome. She was very friendly, upbeat, and attentive without ever being a bother.
Star knew the menu inside and out, gave great recommendations, and made sure everything came out just right. She has one of those rare personalities that can turn a regular meal into a genuinely enjoyable experience. You can tell she truly cares about her customers and takes pride in her work.
The food was fantastic, but Star’s warmth and professionalism made it even better. If you visit Bib’s Ribs, ask for Star! She is a true star in every sense of the word. I apologize for the corny dad joke at the end
