The food: Probably the best bite I had was the A5 wagyu tartare coronet to start the meal – it was balanced and perfectly seasoned. The next came milk bread, which was just okay, but they only have us one which felt awkward that we had to split the roll. That was followed by two pieces of nigiri. The fish was very fresh and had good quality, but the balance was off as there was far too much rice. Next plate was a butter poached lobster. It was perfectly cooked and tasty on it’s own, but didn’t seem to work overall with the other items on the plate. Pigeon came next – cooked to the perfect temperature, but again something felt like it just was not a complete course. We were most excited for the next course – a winter frost wagyu and potatoes. For a steak house we were both incredibly disappointed with this bite. While the temperature was a perfect medium rare, the bite was actually quite tough and the outside sear was overdone. Then we moved to a cheese course which was also underwhelming. All of the items should have worked together but it just fell flat. I mean really, how do you make cheese disappointing. Then came the final dessert, which was fine but nothing is seek to each again. Overall, the food quality was good, but the meal and courses just fell flat and didn’t seem to work together.
Staff and service: They are all very friendly but seemed to be inexperienced and trying too hard to make it “fancy”. It felt forced, and not a single dish that was presented was explained, which is fairly standard with any tasting menu.
Venue: I was underwhelmed by the atmosphere. The outside seems grand and the inside, while I’m sure they spent a lot of money feels outdated, which is shocking considering it has only been open a few months. Again, it felt like they were trying so hard to be a fancy steakhouse and pulled the pages out of an old design book of what that should look like. The music was an old blend and really quite loud.
Takeaways: I think Roth’s has the potential, but they seem to be lacking an identity and the ability to pull it all together.
Dined in during opening weekend and… wow. Roth’s Sea & Steak delivers the kind of high-class, upscale experience Colorado Springs has been waiting for—polished, welcoming, and unforgettable from the moment you walk in. The space feels intentionally elevated (without feeling stuffy), and the service? Impeccable. The team there is truly locked in.
The biggest mic-drop? The views. Roth’s sits right at the edge/above the Ford Amphitheater, with sweeping sights of the Front Range—and depending on where you’re seated, you can even soak in the venue atmosphere in a way that feels uniquely Colorado Springs. It’s genuinely first-of-its-kind here: fine dining paired with breathtaking scenery and the energy of a world-class entertainment destination.
Food-wise, this is a “special occasion that accidentally becomes a new favorite” kind of menu. Think classic steakhouse indulgence with elevated touches—prime steaks, seafood towers, oysters, caviar service, and tableside moments that truly make the night feel like an experience, not just dinner.
And can we talk about the perk of it being part of Ford Amphitheater? Whether you’re pairing it with a show night or making it the main event, it adds a level of convenience and wow-factor that’s hard to beat.
Major kudos to JW Roth and the entire team for pulling off something this ambitious—and doing it with excellence. Roth’s Sea & Steak (& the Brohan’s cocktail lounge upstairs) is a true gem for Colorado Springs, and it already feels like a place people will talk about for years.
From the moment we were seated, our server Kaeley set the tone for the entire evening. Attentive without being intrusive, warm without being performative. She struck that rare balance that makes you feel genuinely taken care of rather than just waited on. Josh, who assisted throughout the evening, knocked it out of the park as well. Together they made us feel like the only table in the room.
The Chef’s Journey tasting experience was nothing short of a masterpiece. Each course told a story, layering flavors with intention and care that you don’t often encounter. It’s clear that the kitchen isn’t just cooking food; they’re crafting an experience, and every plate reflected that commitment.
And then there’s dessert. I won’t spoil it. That would be a disservice to anyone reading this. But I will say it was the most elegant, imaginative, and genuinely memorable dessert I’ve had in a very long time. It’s the kind of thing you find yourself describing to people days later.
Roth’s isn’t just a restaurant. It’s a proper dining destination.
Whether you’re celebrating something special or simply want a night that reminds you what great hospitality and serious culinary craft look like, this is your place.
We’ll absolutely be back.
The venue itself is truly stunning — elegant, thoughtfully designed, and atmospheric, with a gorgeous grand piano in the lobby adding to the sophisticated ambiance. Upon arrival (about 15 minutes early for our Saturday night reservation), we were greeted warmly and even escorted upstairs to the bar for pre-dinner drinks, which was a lovely touch.
However, for a restaurant that positions itself at Michelin-star level and charges accordingly, both the food and service fell noticeably short of those expectations.
I had called ahead to confirm the reservation and inquire about valet parking (which they do not offer — worth noting for anyone planning a visit). The overall dining experience stretched over three hours, which felt excessively long given the pacing issues we encountered. While some elements showed promise, the execution in both kitchen and front-of-house did not match the premium pricing or the restaurant’s self-proclaimed caliber.
In summary: come for the beautiful setting and perhaps a drink at the bar, but temper expectations if you’re seeking a true fine-dining experience.
Bullet Points…
1. The bisque was cold bitter and salty (sent back still charged)
2. bread service was great but they asked to take it away 4 times
3.the Beef Wellington takes 30 min wait (was not worth it)
4. sides are under seasoned and no salt on table to help with that
5. had to ask 4 times for limes and lemons for water
6. Forgot after dinner coffee for one of my guests
7.served dessert before we received our coffee and tea
8. was charged for wine we didn’t order or receive (removed after)
9. new place that needs to work out the kinks try again in 6 months
10. 3 people, apps, entrees, desserts, 1 bottle wine, 1 cocktail with tip 500 bucks.
As soon as our reservation time hit we were escorted downstairs to our table at Roth’s Sea & Steak for their Valentine’s 8‑course tasting menu ($175 per person), and every course was dialed in. The service was great! They even folded our cloth napkins when we left the table.
The menu was:
– A5 Tartare Coronet with caviar and truffle
– Warm Milk Bread with cultured butter
– Hiramasa & Chu‑Toro with yuzu kosho oil, Himalayan salt, and Meyer lemon zest
– Butter‑Poached Lobster Tail
– Roasted Pigeon Breast & Confit Leg
– Winter Frost Wagyu with pommes Anna
– Aged Gouda with comb honey, winter fruit jam, and toasted brioche
– Vanilla Mascarpone Mousse with raspberry gel and almond crumb
Top‑tier service, incredible food, awesome atmosphere, and just a really fun night overall.
They even gave us a bottle of champagne to take home to top off our celebration!
We will absolutely be coming back!
The entire experience lasted about three hours from start to finish, and every little detail was thoughtfully executed. Each course was beautifully presented and expertly prepared. The chef’s special touches and the general manager’s personal treats made the evening feel even more special and personalized.
This easily ranks among my top birthday dinners in the last twenty years. An exceptional dining experience that I’ll always remember.
We were sat faced towards the theater on the 2nd tier. Our table staff was Travis and Layla and they provided excellent service and commentary towards the food and establishment.
Lazlo the Bar Manager greeted us with lovely mocktails; Maroon Bells and Four Corners both were beautifully presented and tasted wonderful.
The hospitality manager greeted us on several occasions and ensured we were comfortable the entire time.
The food was fantastic and had amazing twists on classic dishes. All the plateware and silverware accompanied the delicious dishes and contemporary ambiance of the establishment.
We couldn’t be happier of the service and food we received, excited to come back in the future for many more occasions with friends and family.
