We came for soft opening 2/6 and had an absolutely wonderful experience. Our server was a delight and the food was excellent. We started with oysters and tried them all which we loved. The shrimp toast was tasty but needed the sauce to get past the fried flavor (a smidge hard to find the shrimp flavor – sauce was yummy). Grilled Caesar’s had a fantastic depth of flavor and ingredients. I had the filet and my husband had the New York which we were seasoned to perfection and tasted amazing. The potatoes (cannot remember their name) on the side were cheesy, creamy and delicious. We wrapped it all up with the Kind of Carrot cake which was a fun and funky deconstructed carrot cake featuring candied carrots (so good), candied nuts, dobbs of cream and ice cream topped off with red pepper corns giving it a remarkable complex flavor.

The Hudson is an elegant upgrade from the former Wall. Although the layout is essentially the same, the new finishings, lighting, color scheme, and furniture are certainly more cosmopolitan and chic. The “Last Minute” cocktail (much like an Old Fashioned) was too subtle, but the “Hudson Manhattan” was spectacular, robust and flavorful. The “Baby Beet and Pear” salad was also flavorful, especially if you dig beneath the fresh vegetables to find the excellent blue-cheese maple dijon dressing. The “Wagyu Beef Tartare” was fairly spicy, with hard notes of onion and peppercorns (I think they were peppercorns, or perhaps capers), yet the portion was generous. Two cocktails, two appetizers, a pleasant hour of excellent service (sitting at the bar), and the total (with tip) was $90.

Food was SO GOOD! Oxtail soup, crab fried rice, aged cod, and slow roasted pork belly were all delicious. Drinks were tasty, and tiramisu was tasty too. Service was also great too. Reid was our waiter and he was delight. He was personable, courteous, charming. The man who seemed like the front manager was kind as well. Environment and atmosphere was chill with good lighting and soft tones. “Fire”place upstairs was nifty and could be a nice place for an event. The only reason the score was not perfect is that it took the drinks forever to come (and not at all for our second round) so that’s a bummer. VERY pricey so nice every once in a while or for a date night or something.

i’ve never written a review but was compelled after last nights dinner. one of the best meals this year. they made chicken, mushrooms and mashed potatoes (i know, boring) taste like gourmet food. Price was right, service was perfect and the ambiance was ideal. 10 gold stars!

Regrettably, not a good experience. Mediocre at best.
Poor overall when you factor in the prices.
Cocktails are mediocre at best.
There were no signature cocktails on the drink menu that piqued our curiosity.

The cocktails served were lackluster at best.
The plate the albacore appetizer was served on was dirty.
The scallops were average.

Speaking of the sides, the broccolini was cold and overcooked.
While the Cod was nicely flavored, it was overcooked.
At least it came with a side of seasoned rice.
Sadly, far too many misses.

There are many better options in Bend.

Have been several times already! Love this place, and the options. Menu is wide, with something for everyone (including gluten free). Had the scallops this time – huge and tasted great. Wife had the chicken, best she’s had anywhere! The sides of mashed potatoes and mushrooms also excellent and pair well with the food. The atmosphere is really nice, and the sound deadening tiles on the ceiling make it very easy to have a conversation. The staff is top notch (including Samantha, Somm Zach and Chef George) Would highly recommend The Hudson.

Definitely a great spot for elevated food and drinks. First time in within that 2 week opening time and they still crushed it. Props to the chef, also… Reed is the best server in this town, ask for him by name. Seriously.
