Dark. Discreet. Decadent. An indulgent refuge of over the top decor and under the tank mischief. A watering hole for dreamy aesthetes, wandering flaneurs, and swaggering dandies. Here, the high born mingle easily with the lowbrow, bon vivants linger with the lugubrious, and everyone is willkommen. A guy’s guy sort of place, with a menu to match: epicurean, savory favorites shaped by the Chef’s personal obsessions. A wine list not meant for the faint of heart. A bar that gladly pours your martini in place of an entrée. Desserts designed to prolong the pleasure principle. This is a return to an era when evenings unfolded slowly and dressing to impress was a given. Jackets are required for men.
Classic & modern French fare served in the snazzy dining room of the posh Parker Palm Springs Hotel.

Reviews
Atmosphere is wonderful and when you arrive you get high-touch treatment – speakeasy style entrance, complimentary mini flashlight to see menu, bone marrow butter in the shape of a candle, a piano player, branded matchbook which are rare these days. Host and Sommelier were wonderful.
Food standouts: crab cake, halibut, duck. We were too full for dinner.
Courses were very spaced out – our meal for 4 was 3 hours
Take some time to see the hotels artwork and decor
It can be a little hard to find the entrance at night
Birthday Perfection at Mister Parker’s
We celebrated my boyfriend’s birthday here, and wow—what a night. The dim, sexy glow, velvet vibes, and perfectly crafted cocktails set the tone. Every bite was decadent, every glance across the table felt electric. Mister Parker’s isn’t just dinner—it’s foreplay for the senses.
They have a dress code but will also accommodate you if you don’t have a sports coat and will give you a fun/funky vibrant jacket to wear!
$$$$ Must Try;
Burrata Salad
Brussels Sprouts
Roasted Chicken
Halibut
Chocolate cake
Drinks were great.
It’s fine to go to for an institutional box check, but there are better dining experiences in PS.
Drinks were spectacular we had Sidecar and French 75 first night and then Negroni and Ruinart second night. The Sommelier Bruce is outstanding and he has some wonderful selections. We had brought our own bottle but were so impressed by his selections we ordered a wonderful Barolo. Amazing! Food was outstanding. I had Lyonnaise salad (superb the way the salad dressing and pork blend and mix wonderfully) and Chitarra dish (noodles with Cavier which I thought was good but didnt blow me away). My wife had the Mushroom Veloute and Halibut and she said both were outstanding. The next night we had Burrata salad and Lyonnaise and their chicken dish which was superb. Highly recommend and can’t wait to go back!
They are now putting cayenne in the lobster bisque and for me, it overpowers the delicate lobster stock that is the base.
I was looking forward to the Spice Cake with Pumpkin Mousse and Salted Caramel Popcorn that was reviewed by Kamala Kirk in the December 2024 issue of The Guide, page 26. Our head waiter asked the chef about it when I inquired, and neither were familiar with the dessert ♀️.
Victor (new manager) came by a couple times to check on us and provided some extra care and accommodation during the dessert course.
The bone marrow and butter candle served with the warm sourdough loaf was amazing as always.
Great service, music, and atmosphere
