
Executive chef/partner Matt Wilde created our unique Pilsen-style Pizza in our first Bob’s Pizza location that opened in Pilsen in March 2019. Our signature dough is crafted with Chicago’s favorite Old Style beer, 00 flour, and a secret spice blend. The dough is hand-stretched and finished with applicable toppings, housemade sauce, and a proprietary three-cheese blend (mozzarella, Parmesan, and Swiss) on most pies before being quick-fired in pizza ovens.

Bob’s is my favorite pizza spot in the city after trying dozens!! Incredible NY style.
(Just fyi, onions are NOT included in the sausage pizza as depicted in the online order picture. They have to be added as an additional topping.)
I live across the street and noticed them last year when on my balcony and the smell of fresh pizza came up to my 14th floor. Then one day, walking on that side of the street I took a look at their menu and knew we had to order from here because his style, somehow it reminded me of Italy!
So we kept forgetting to get their pizza till last night. We got the Spinach Pesto & Stracciatella Pizza and added banana peppers and classic sausage with onions. Thin and not so thin, crispy and delicious! Both, the bomb!! Now don’t forget to get the oatmeal cream pie, simple and rich but not too sweet.
To the owner, I love the quality of your pizza and the ingredients you use. You have made me want to eat pizza again, I am gluten sensitive and this pizza did not bother me, ingredients are so good.
Update: looks like this place is on the way out. The quality of their pies has really gotten bad. I picked up a pie that that was cold, slices were cute in different sizes, the were folded over on themselves. The whole thing looked reheated. It’s a shame, they used to be much better.
