What a hidden gem! The ambiance at 7am was chill, upbeat and happy. Chill music playing, warm, welcoming and BEAUTIFULLY decorated.
The food was delicious with several allergy choices for such a small town in Kansas. A wonderful surprise for someone allergic to nuts and gluten!
The coffee was some of the best I have had, give their Insomniac drink a try, it is a unique flavor of their own white roasted espresso that is truly distinct. Alternate milk choices (again a wonderful surprise for someone who has to have oatmilk)

I cannot say enough good things about Rhubarb Market! This is truly a hidden gem in Kansas. Their food selections are all incredible, with a variety of options for those with food sensitivities. The menu is always rotating to follow the seasons, and the attention to flavor medley and high quality ingredients is evident! The atmosphere takes you to a cozy cafe somewhere in Paris, and the family that owns this business overflows with genuine kindness and dedication to excellent service. 10 out of 10 recommend!

It’s the best thing in Hillsboro! We are blessed to have a place of this quality in a small town. I would highly recommend. They roast their own coffee, make their own special syrups for specialty drinks, their baked goods and food items are amazing!
