A great place for brunch!
We stopped in four brunch and to celebrate a big birthday. The staff were very welcoming and friendly. We felt right at home.
We had a selection of food that was all amazing.
The Breakfast Poutine was really well done and VERY filling!
The French toast got rave reviews.
The Steak Huevos Rancheros was a huge hit as well.
I don’t think you can make a bad choice. The overall feel was really good and we’ll be back for sure.

We come to Hope Lake Lodge every year and always enjoy an amazing steak dinner. We were celebrating my son’s 15th birthday. The area we sit at by the fireplace was closed for a private party. The manager, Justice, offered to have our dinner in the loft. I brought some tablecloths and a banner from home and left it in the loft so I could decorate before dinner. When I went to decorate, not only had Justice set up the tablecloths and the banner, but she went out of her way to blow up balloons for a centerpiece! She also made sure a tv was set up in the loft so we could watch the football game. Our food, service, and atmosphere surpassed our expectations !! Thank you for making our dinner so special!

Porterhouse steak was okay but not worth $75. My scallops were ice cold and chewy. I like my steak medium rare and it was cooked well but unfortunately my steak was mostly grizzle and bone. My wife’s steak was supposed to be well done and I realize a lot of steak houses don’t like cooking steaks well done but her steak was literally all ashes with a ton of peppers and onions on top. They took it back and it came back cooked perfectly, but having to wait another 25 minutes while my food sat there getting cold ruined the meal so we sat there and talked and took the rest of the meal to go. Our garlic mash potatoes were bone dry. The french onion soup was okay. Also I made reservations and still had to wait. Our server was fantastic. She was attentive and apologetic. They made good on the burnt steak but I was very disappointed with the overall outcome of the meal. The mushroom mini riceballs were delicious. My daughter recommended this restaurant because she loves the food there. The place was very busy so maybe it was an off night, but this was our experience. The seats there are comfortable also. I will try a different dish next time I go in hopes of better results.

We just had an absolutely lovely meal on Labor Day! We ate outside and had incredible Tomahawk steaks! The calamari, cesar salad and arugala salad were all awesome as well. Kids meals excellent. Service and ambience divine. The fires were lit and the drinks were awesome. Daisy is a great server who took great care of us. Couldn’t recommend Carver’s more!

Visually impressive, hidden gem with fantastic portion-to-price ratio. A great value.
Minor knocks from my visit: Table wasn’t fully clean, food was cold in the middle (breakfast poutine), Brioche is listed as “Everything Brioche” which would presumably have everything bagel seasoning on it, but it just came out plain. Big bummer. The music was a bit too loud as well, but thankfully it wasn’t classic rock at least.
Otherwise, it’s a great spot with nice ambience, and a non-Cortland County vibe that I look forward to visiting again.

We had lunch and dinner at Carvers. We were a little nervous of what we would be able to find off season at a ski resort but were pleasantly surprised by the restaurant here! Service was very friendly and attentive, the menu was varied and the food was good. Wine and beer list was also good. Generous portions, we would definitely come back again if we’re in the area. Patio is also really pretty at night.

Justice has made our experience at carvers top notch. Knowing that our large party had some unique requests she decided to go above and beyond with the service. The food was amazing. Cooked perfectly! This literally felt like Aunt Justice just threw her nephew a birthday dinner. It didn’t feel like this was someone we just met.

The service was good, friendly and on top of things.. the chef cooked a perfect steak presented with the Bone but both sides cooked to perfection.. Best Porterhouse ever had. Most do not realize one side is a filet mignon, to cook it to the temp of the other side is to do it a dishonor.. the wife enjoyed her sea scallops. The mark off came for the device hanging from the ceiling. Either the employees do not pay attention while cleaning..or the Maintenance team is failing.. Either way little things like that make you wonder what bigger things are not cared for. Mind you is attached to a hotel, water park at a ski resort.. I am sure they have a maintenance team!!

Very nice experience. Everything we had was delicious, although I would have given 5 stars for food, but our steaks were under-seasoned. A little salt and we’d have had a perfect dining experience. Very nice place. We’ll definitely be back.

Inconsistent Walk-in Policy and Discriminatory Service
I had a very disappointing experience at this restaurant. We arrived at 7:45 PM and were told that walk-ins were not accepted. However, we witnessed a party of two who also did not have a reservation walk in right before us and be seated immediately.
The restaurant was not very busy at that time—we could see several empty tables available. It was also well before closing time. After whole day skiing and spent time at the waterpark, we were looking to eat dinner and we were with our two hungry children and yet the staff/host/looks like she is the manager refused to serve us. You should not be in the service industry at all!
This treatment felt highly unfair and discriminatory. It is unacceptable to pick and choose which customers to accommodate based on anything other than a clear, consistent policy. I expected much better.
We will never come back. Do not recommend. Avoid!!!
