Listen, I don’t hand out “legendary” lightly, but Pho Cali absolutely earned it.
I started with the Khai Vi Dac Biet appetizer platter, which showed up looking innocent enough until the first bite. The spring rolls were fresh, bright, and packed with flavor, and the fried egg rolls were so perfectly crispy they practically shattered in the best possible way.
Then the Bun Dac Biet arrived… and that’s when things got serious.
Grilled pork with that smoky char, sausage, meatballs, fresh herbs, pickled vegetables, scallion oil—basically a bowl of organized delicious chaos. Every bite had something different going on. Light, fresh, savory, a little sweet, a little tangy. Whoever engineered that bowl understood the assignment.
Now here’s where things escalated.
They have this house garlic chili sauce that could probably heat a small New York apartment building. I mixed it into the peanut sauce and started dipping the spring rolls in it, and suddenly I understood why people get obsessed with Vietnamese food.
Cold Singha beer, sunlight coming through the windows, and a bowl of noodles that had no business being that good.
Honestly, the only downside was eventually finishing the meal and realizing I couldn’t order the entire menu without embarrassing myself.
If you’re anywhere near Melbourne and like food that actually tastes alive, Pho Cali is absolutely worth the stop.
10/10 would happily destroy another bowl of bún here again.

I ordered their Combo Special Pho, which felt like the perfect choice for the chilly 54-degree weather. The food arrived in less than five minutes, which was pleasantly surprising.
The broth was clean and had a slightly sweet undertone, though it didn’t quite meet the depth of flavor I was hoping for. The variety of meats in the combo was less than I expected, but overall, I was still satisfied with the meal and will certainly come back to try their different food on the menu.

We were in Melbourne one night and decided to try Pho Cali. Everything we had was delicious and service was friendly and quick. The pork spring roll was pretty thin but everything was fresh. The banh hoi thit nuong and pho were absolutely delicious! Would def come back if we’re in the area.

This place is pho-king PHANTASTIC! I was introduced to pho here over 20 years ago and I’ve never missed an opportunity for Vietnamese since. I’ve actually fallen in love twice here – first with the flavor party you get to customize in your soup, second when my Man took me here on our first date ❤️ The Vietnamese pancakes are quite delicious, as well! I’ve taken multiple people here for their first pho experience, always resulting in a “phan for life”. Authentic, delicious & cures what ails you!

Ever since moving to melbourne, pho cali has been the go to after visiting the rest of the pho restaurants.
The broth is rich, clean, and has a good amount of fat to the broth. Delivery through door dash is also pretty consistent.
I will say that for the price, it would be nice for them to add more noodles, broth, or a combination of both.

We love Vietnamese cuisine, and I especially love a good Pho’. Always seem to gravitate towards Pho’ with steak, brisket, and gelatinous tendon. Also love a good shrimp spring roll or 2.
That’s exactly what I had here, along with a Mango boba tea. All of which was simply perfect. Flavors are spot on. Quality and quantity are excellent.

We were in the area on a weekend getaway from Tampa. Have family moving back into the area soon, so that means we have more than one reason to come back.
