AcWauwatosa landmark, found in 1938, Gilles is Wisconsin’s oldest continuously operating fast-food restaurant and frozen custard stand. It is the oldest for a reason. Excellent product. Still family owned and operated. In fact, when ai visited on 9/5/25, my fresh pack custard was prepared by the general manager, who is a descendant (? Great grandson?) of founder Paul Gilles.
The custard here is rich, smooth, creamy. It is so fresh.
TiP: Request fresh pack vanilla, chocolate, flavor of the day and/or flavor of the month in either a pint or quart size. It is truly the freshest custard you will ever savor.
Service is always excellent.

Gilles is Milwaukee’s oldest frozen custard shop, so I was excited to finally stop in again during a custard run with my partner. We visited on a Friday night and the flavor of the day was lemon. The neon sign lit up nicely as we pulled in, and there was plenty of parking. It was busy, but the line moved quickly, and the staff at the counter were friendly and welcoming.
We ordered a scoop of the lemon custard along with their specialty that month, curly fries. Unfortunately, both were disappointing. The custard tasted watery and lacked the dense, creamy texture you expect from frozen custard. It may have been a bad batch, but it didn’t compare well to other places. The curly fries were also bland, without the seasoned coating you’d expect from curly fries like Arby’s.
Pricing is on the higher side. A three-scoop dish at Gilles costs $7.25, compared to $6.00 at Kopp’s and $4.15 at Oscar’s. With the custard’s texture off and the fries underwhelming, it felt like poor value for the price.
That said, service was fast and friendly, and I’d be open to giving Gilles another try. With its long history, I want to believe this visit was just an off night.

The custard is awesome. Fries and onion rings, also great. However my family and I recently stopped for custard after a family outing. Im pregnant so I also got a burger, so did my 14 year old son. What a disappointment. The patties have an off taste. Definitely not fresh. The fake grill marks were ironic. So to recap, awesome custard, awesome Fries and onion rings…the burgers taste like a cheap frozen dinner. Not worth the money. At all.

First time visiting and had a cup of vanilla custard. Excellent! My mom says it’s the best she’s Ever had and she’s had a Lot of ice cream / custard. Lovely little throwback place.

Old timey custard stand with great great great custard! So smooth and rich! Unbelievable! The staff is super friendly and welcoming and the atmosphere feels like going back in time!

Gillies used to have exceptional custard, but that is no longer the case. The ice grain is off, and the flavor is closer to a DQ dairy milk. The owners have clearly decided that they no longer have any interest in quality or consistency.

Gilles Frozen Custard in Wauwatosa is hands down the most delicious frozen custard spot in Milwaukee. What I love most is how they always have a fun flavor of the day, there’s something exciting about stopping by and seeing what special treat they’re serving up. Their custard is so creamy and rich, it’s like the perfect cool hug on a hot summer day.
If you’re into floats, their freezy floats are great, refreshing and just the right amount of sweet. The staff here are always friendly and welcoming, which makes the whole experience even better. Whether you’re grabbing a classic vanilla cone or one of their specialty sundaes, you can tell they really care about quality and keeping customers happy.
It’s a cozy, local gem where you feel like part of the family the moment you walk up. Definitely a must-visit if you want that perfect frozen custard fix with a smile!

Came in Saturday Dec 27th at 6:45, waited 20 minutes while we literally watched 5 (minimum, sometimes 6) employees standing there watching a screen. We ordered cheese curds which we did not get, and my big daddy burger with everything on it came with ONLY bacon…? Absolutely disappointing. .25 stars (because it was somewhat entertaining to see how unreal this experience was)
