To put simply, Chiba bar is a well loved community bar that ensures quality and guest experience. Chiba bar is here for everyone, and it’s always a pleasure to set foot into the establishment. The staff are all experienced and professional and hold a passion for what we all love in service and guest experience. Personal shout outs to Payden, Forest, John, Anastasio, Camille, kitchen staff, and the owner for always being such a welcoming hospital host.
The best way to describe the food is Japanese street food, ranging from notable mentions of their delicious tempura battered onion ring miso soup, poke and salmon bowls, and other small bites you can nibble on. All food, beer, spirit, and cocktail pricing are competitive as well.

5/28/25 Update: Still visiting as a loyal patron. Shout out to John D Terry himself for making, in my opinion, one of the best cocktails in a city. What’s more impressive is the volume of the bar and the consistency of which the “Tom Cocktail” is made. Everything you want in a glass with herbatious, bright, and savory flavors. Cheers again!

All of the food was delicious. I enjoyed the analog roll, miso soup, and takoyaki. I did not enjoy the lighting, it felt harsh but maybe it was the side we sat on.

Came here as a farewell send off to a good friend/coworker who this is their favorite bar and this place did not disappoint! I ordered the razorgirl because it had peach and cranberry so I knew it would sweet and it was! So good it was easy to drink and it was strong! I had to order some food after drinking it so I chose the fried dumplings and those were perfect! Crispy yet soft and packed with flavor! They were so good I devoured them quickly and left me wanting more! We really enjoyed our time, the atmosphere is casual and makes for easy conversations. The staff were great making sure we had everything we need, checking on us multiple times. I definitely will be back to try more drinks and food!

Chiba Bar is hands-down one of my favorite spots in Colorado Springs. From the outside, it looks like a Japanese dive bar—if such a thing even exists—but step inside and you’re transported into a neon-soaked dream. Think glowing lights, disco vibes, and flashes of Japanese anime everywhere. The soundtrack is straight out of the ‘80s new wave era, setting the perfect retro-cool mood.
You seat yourself, and while the place often feels a bit understaffed, the team runs with sharp efficiency. The cocktail menu is nothing short of divine—eclectic, inventive, and always surprising. The food bursts with bold, unexpected pairings that somehow just work. Honestly, the best move is to hand the reins over to the staff and let them guide you; they’ll put you on a ride of pure culinary delight.
When you finally walk back out into the night, you leave lighter, happier. And really, what’s better than that?

My husband and I decided to try Chiba Bar in Downtown Colorado Springs on an impromptu date night and it did not disappoint. The atmosphere is laidback and they play a lot of obscure music from artists I love but not many people have heard of (think small coffee shop playlist, but 80s synths and sax). The drinks were immaculate. We tried Razorgirl, Lychee Buck, Shiso-Jito J-Type, & Passion Among the Stars. Despite having ingredients I’ve never heard of and lots of fruit flavors, they were lightly sweet, refreshing, and covertly strong. It made me wanna turn into a middle aged dad and say “oh this is daaangerous.” The food was even better than the drinks, with the stand out being Devon Fakey 180 sporting a fantastic mix of tempura shrimp, creamy surimi, spicy kewpie mayo, kabayaki, avocado, sesame seed, tobiko, & jalapeño and nori crisps on the side. Our service was attentive and prompt, even on a Friday night around prime dinner time.

One of my favorite food spots downtown! Very cool atmosphere, great service, and the food is always delicious. My favorite thing to order is the spicy seared ahi donburi rice bowl. The gyoza is also great! I enjoy their limited specials as well. Yesterday we ordered pork meatballs with green papaya slaw, and it was so good.
The portion sizes may seem a bit small, but I think that makes this restaurant great for sharing food with friends. 🙂
Bonus for great music and fun things on the tvs! Yesterday they had LOTR, Death Note, Full Metal Alchemist, and Evangelion playing!
