It is so nice to see this business open in the neighborhood. The environment brings a hipster Mexico City vibe that is simply needed in the area. The service really is a bit awkward but super friendly and reasonably timely. I am happy to support this business launch but I must admit that I see some challenges. This area has some well established taco franchises that offer authentic experiences with high quality food. Unfortunately, the food left a lot to be desired. We ordered some breakfast tacos, steak tacos and one veggie taco. The quality of the tortilla was not the best in flavor and consistency, the tortilla was not cooked to the point where it had the give necessary hold ingredients and all the filling would tear through even light items like the eggs. The flavor of the tacos over all seemed to approximate the flavor necessary but did not quite hit the mark. In the case of the steak, it was not the preparation or seasoning but rather how the meat was cut. The steak was cut too small almost minced which impacts the texture, by disproportionally cutting meat-to-fat ratio too thin, the satisfaction sought when biting a steak taco is missed. The veggie taco was an absolute waste, for $4.50 we got tortilla soggy shredded lettuce, a tomato, an onion, an avocado, crema (we requested), and zero flavor. This place has potential, will revisit in a couple months during the evening to see if the food is a bit better.

We went to El Guero for the first time today and it was great! The location was nice and food was delicious, probably the best Mexican food we’ve had since moving to Maryland a year ago.
The staff lacked energy and didn’t seem to enjoy being there, but we still had a great time. I noticed some other reviews saying their food didn’t come with toppings automatically, but ours did. Mentioning that in case it’s important to anyone 🙂 We’ll be back for sure!

We ordered a chicken taco and were very disappointed. As shown in the photo, the taco came with just chicken and a plain tortilla—no tomatoes, no cilantro, no onions, nothing like what they used to include at the old location.
When I called to ask about it, I was told they no longer add those ingredients unless the customer specifically requests them. This was never mentioned during the phone order, and the person taking the order didn’t ask if we wanted any toppings or extras. That lack of communication made a big difference.
We used to love Taco Bar El Güero and had high expectations, especially after they moved to a better location. Unfortunately, instead of improving, this experience felt like a step backwards. This order left a really bad impression compared to what we were used to, and it’s disappointing to see the quality and attention to detail going downhill.

Stopped by Taco Bar El Guero and went straight for the burrito bowl—split between steak and pastor. Honestly, both were excellent but in different ways: the steak had that nice charred flavor you want, while the pastor came through with a touch of sweetness and spice that kept every bite interesting.
The toppings were fresh, portions generous, and everything felt well-balanced (not just rice filler like some spots do). What stood out was how flavorful the proteins were on their own—you could tell they marinate and season with care.
The vibe here is casual and welcoming, the kind of place you can pop in for a quick bite, hang out with friends, pick up dry cleaning, or get gas. Yes you can do all of those things under the same roof. Prices are fair for the quality, and you definitely leave full.
If you’re in Gaithersburg craving Mexican street-style flavors, this spot is worth the stop.

We have been waiting for months for this restaurant to re-open in the new location. Previously, we were eating here every other week for the last few years. Unfortunately, our meal and in person experience were very disappointing. The staff had no energy, rarely made eye contact and seemed annoyed to be there. (The previous location had always been buzzing with energy). I placed a to-go order and once it was ready was told “toppings are there” as the employee pointed to a toppings bar. So for an order I was hoping to pick up quickly and take home to my family after a long day of work, I then had to go put all the toppings on myself. Note, the bar is quite small so there ended up being a line of people with to go orders waiting to put their toppings on. And orders used to come dressed with toppings already. I don’t know why a family with so much experience running fast-paced restaurants would choose to make this change. Specifically for to-go orders. Once I got home, I realized that even though I had ordered pastor, I was given some type of beef that was quite dry. Very sad to say we don’t plan to come back based on our recent experience. Hopefully they are able to work out the kinks here and take action on the feedback provided, because this place used to be incredible!

I’ve been a patron of this restaurant a decade before it moved to its new location. When it was situated within the gas station, It had its own unique energy and a consistent delivery. You could always expect the same quality and service. I heard they were moving across the street to the larger Crown development, And held off For two months before going in to see how they have transitioned. I was greeted by the cashier with no eye contact, zero interest in even pretending like she wanted to take my order, and overall an awful first visit. I wanted to walk out right away but ordered instead. Anyone who has been here knows that this free access to the condiment bar was something they took away at the gas station location many years ago… And they have brought it back in this new location. I think that’s a terrible move. It was mess, you have to wait for people to get out of your way to get your toppings, and the wait for the food was double what I ever experienced at the old location. Go back to your simple formula because it WORKED. Change is good, but if you don’t change and IMPROVE….then what is the point? I am Hoping it is just growing pains …but the parking is a bad fit, the energy of the employees was dull/dead, and I miss being able to count on my visits here. Oh well

Coming from LA and some of the best tacos, this place is certainly up there. Especially the lengua aka tongue, tender and juicy. The al pastor and chorizo were also good. You have the default option of corn tortillas or to pay a little extra for flour tortillas, both hot off the grill.
Service is friendly. The atmosphere is inviting.

Place is dope. It isn’t what it used to be. Mind you it could’ve been due to the fact that their about to renovate so the bar is gone but that wasn’t a problem.
My thing was the quality has gone down. Definitely lacked flavor from the meat lacks and it never did before. I was really disappointed
