We had an outstanding experience this evening at Craft on Seminary in Galesburg. From start to finish, everything was top-shelf.
We sat at the bar and were taken care of by Amanda and Adam, whose service was absolutely exceptional — professional, attentive, and genuinely friendly.
We’ve been to Craft a few times now. Our first visit under the new management didn’t quite live up to our expectations, but this second visit was an entirely different story. The food, service, and overall experience were all exceptional — you can really feel the team hitting their stride.
We started with the Prime Fillet Carpaccio and the CHEZ Willis Calamari, and both were fantastic. Perfectly fresh, balanced, and not over-seasoned — just clean, well-executed flavors that let the quality of the ingredients shine.
The atmosphere strikes that ideal fine dining tone without feeling stuffy — the kind of place where you can relax, enjoy a great meal, and appreciate true craftsmanship in both the kitchen and behind the bar.
We truly hope more people discover Craft on Seminary — it’s the kind of place that deserves to thrive. If you’re anywhere near Galesburg, make a point to stop in. You won’t be disappointed.

Craft is a gem of a restaurant. Excellent food. The people are wonderful. My wife and I had the Ahi Tuna and a Ribeye steak, both delicious. Wine list is superb. Our server, Bethany, took really good care of us. Atmosphere is refined but still relaxed and comfortable. Gorgeous fire place and piano by the bar. They handled dietary restrictions very well. Best restaurant in the area by far.

Our second visit confirmed our memories of a delightful experience the first time. Steaks were all top quality, prepared and seasoned perfectly. Staff were uniformly low-key efficient and very pleasant. Mom commented on the rare ability to converse at a normal volume. My only small gripe and all too common in fine dining… the lack of a good craft beer list when there are great ales made locally as well as the proximity to Wisconsin. Mediocre euro and Japanese lagers were offered, while the wine drinkers were offered a superbly curated and extensive list to choose from. We’ll be back on our next quarterly visit to Galesburg. How about one of those Iron Spike stouts or porters to pair with my rib-eye?

It was a laid back, beautiful atmosphere
For a work trip dinner. Ther music was medium levels of loud. The food was perfectly made. Wonderful flavors and impeccable drinks. We will definitely be eating here again soon! If you want a classier not overly busy place to eat, I strongly suggest giving this beautiful place a try!

I ordered the Ahi Tuna. It was by far the worst meal I ever had. I think it was freezer burnt or fake. The rice dish they served was equally bad. Another person at our table got a medium well steak instead of medium rare. It took over an hour to bring our food. The people next to us that came in after us were finishing desert before we got our order.
We got there at opening and the bathroom was still very dirty from the night before with an overflowing trash can.
Not what we expected from a place that holds itself out as upscale.
Very disappointed.
