
Genoa Pizza owner Giuseppe Pizzo was born in Detroit, Mich., and he grew up in Italy. He opened his restaurant in Sugar Grove 20 years ago, but the real history dates back to 1975, when his grandfather opened his Genoa Pizza in Genoa, Ill. It all starts with good quality product, Pizzo said. We have a good, quality pizza sauce and pizza dough that was handed down from my Uncle Pete. Pizzo said he started out his work life as a finishing carpenter. When he found himself in hard times, he said his brothers gave him an opportunity, and here I am, 20 years later.

It would be an absolute dream come true if Genoa’s would create a build-your-own salad item on their menu. It would help my wallet to not pay full price for a salad with half the ingredients, and it may increase sales for your salads, since you can charge a little more for separate ingredients then you could for a fixed-price salad.
Cons: The regular thin crust is quite terrible. It was so tough, even their cutter didn’t cut through it completely. And they were horribly chintzy with the cheese. One of the pizzas was half cheese only, and it was basically sauce, that awful crust, and some vague hint at cheese. The ingredients on the sausage pizza were above average in flavor; but it’s a pizza, so it should have some cheese on it. Particularly when we had to basically only eat the tops because of the inedibility of the crust.
Take-away: May order again with an instruction to make the crust very thin and to actually, you know, put cheese on the pizza, because the sauce and ingredients were quite good.
Food was amazing. The Genoa Special pizza is delicious and the Greek salad had an ample amount of olives.
