Sprouts for the soup were fully sprouted and the Thai basil had seen better days,
Tiger rolls also tasted like they had Blue cheese in them , asked for a replacement order of “egg rolls” and was talked over and told that it’s cream cheese, crab meat and bell pepper as if I’m clueless and don’t know what a traditional tiger roll is.
Surprisingly the soup was edible, but lacking flavor.
The owner is a hard working one man army. I’ve worn those shoes in the kitchen while on St. John, USVI. They aren’t awesome most times.
Luckily, it’s been a few beautiful years since I was on a line. Its taken a few years of silent therapy to again feel the equanimity that creating a plate brings.
Some scars leave no marks.
But I digress.
Opening amidst stiff, established competition in Burlington and Winooski, this restaurant does a solid job. For a restaurant trying to find its legs during a pandemic, the food is good and will only get bettter.
The cold shrimp rolls are good, but had no pork (traditionally included).
Please note that they serve their banh mi with mayonnaise. I.Did.Not. A good substitution may be a little sriracha? I liked that they had slices of mild jalapeno included.
The pho was not overly aromatic or salty. The clarity was a little muddled. Gelatin extraction was moderate with a noticeable hint of beef fat that clings to your lips, but not overpowering. The noodle portion was generous, but the tendons needed more time (or a pressure cooker).
Service was friendly.
I applaud them for even opening. Facing these unprecedented financial times, I would have kept my money in my pocket.
I’ll be back to support them.
The owners are very sweet and just moved to VT. Would definitely recommend their food, especially if you live in the South Burlington area. It’s comparable to Pho Dang and Pho Hong without driving to Essex 5 corners or North End of Burlington/Winooski.
