The menu evolves continuously, offering return guests a new experience at each visit, living up to the ephemeral nature of the original pop up dinners. The chef duo, Ian Dedrickson and Nora Dillon, encourage conversation, indulgence and experimentation throughout the meal. Reservations are recommended for the tasting menu & are offered from 5pm – 10pm. I don’t consider myself a Foodie or critic, but rather someone who enjoys a good quality meal. Our kids purchased a gift certificate for our anniversary, so we ate here for the first time. The welcome and customer service was excellent from the start. Our server was super attentive and explained all the dishes in great detail. Personally, not used to the small bite servings but each was a nice taste before the next dish arrived. After the five courses, I was pleasantly full and satisfied. Would eat here again for the next special event and see what the courses are since they change frequently. Glad to have this restaurant option in Colorado Springs in the downtown area. Decent parking options also make this an easy choice for your visit.

The best meal I’ve had in the United States in the past three or four years.

What a treat if you are in Colorado Springs! This is an incredibly creative culinary experience without being strange. Everything has a maximum amount of flavor extracted from it. For example, on one of the dishes they made a type of a purée, which is a reduction of local sour cherries plus a few savory ingredients. Think of it like the Colorado western slope equivalent of a Mexican “ mole” but without the heat. That’s just one tiny detail of an unforgettable meal.

Birthday Dinner! We had a wonderful experience celebrating my birthday. We enjoyed the element of surprise with the tasting menu. Our server (originally from AR, I forget her name!!) explained every dish when it arrived at our table. Excellent server! I particularly liked the music playing- MM, Cursive, etc (don’t forget to tell ur wife about Cursive @ Vultures in Sept!!) . Chef Ian is involved and present, and proud of his artistic, delicious creations. Thanks for the great experience!

Our experience at Ephemera was truly exceptional, thanks to Chef Justin and Chef Josh who exceeded our expectations and provided a highly informative and enjoyable experience. As a chef, I asked numerous questions, which they readily answered, sharing their expertise while expertly preparing outstanding dishes.

We began with the Amuse-bouche of Grouper cheek cerviche, featuring a captivating twist with mango and takaziki, which proved delightfully light and playful.

Next, we savored the tempura Guinea Fowl with Maple-Bourbon Gravy, Black Currant, and chili peanut, a life-altering culinary experience. The tempura was perfectly crispy, while the black currant and chili peanut formed an extraordinary combination.

Our third course, a tagliatelle with Beet Arabiata, Black Cumin Chevre, Anise Raisin, and Pangrattato, was truly exceptional, and I intend to devote considerable effort to replicating this masterpiece. If you are in Colorado Springs, I highly recommend visiting this innovative eatery and opting for a seat at the bar, which serves as the chef’s table!

The drinks, the staff, service and the atmosphere are truly wonderful! 100/10 recommend!

This was the best dinner out I’ve ever had. It was the perfect place for a date night with my husband. We’re both big foodies and each and every course was mind blowing and a few courses left us at a loss for words. Bottom line, absolute worth the splurge.

My wife and I had the pleasure of trying the tasting menu, and we were absolutely delighted! Since it changes regularly (hence the name of the restaurant), I won’t dive into specific dish details, but I can tell you, it was a delicious five-course adventure filled with truly unique flavors. What a fantastic dining experience! The chef and the staff were amazing, guiding us through each dish along with the ingredients and flavors. A must-try experience!

Very nice and attentive service, the chef serves you the dishes himself.
The tasting menu is unbeatable for the price, and they stick to great, well-established wines instead of trying something funky.
Anyone looking for a special dinner around the area should give this a chance.

This is hands down the best I’ve been to in the springs in a while. And definitely one of the best meals I’ve had here. The flavor profiles of the food are complex and rich but also make a lot sense and they’re very enjoyable plates and portioned very well. I had the New York strip steak, it was incredible. the staff have amazing spirits and the atmosphere makes it easy to enjoy the food. Definitely recommending this place to my friends!!

We FINALLY made it to Ephemera. It was a wonderful experience from beginning of the meal to the desert. We did the tasting. Everything served was delicious, well prepared, served perfectly and presented impeccably. The soup was so unique and delicious. It had a pickled and fried oyster mushroom! Who does that? The taste of the chicken was complimented by an adobo sauce and a coconut foam. Loved it. The dessert was a flavorful chocolate cake that was like a brownie complimented by a lychee dot gel. I’m missing a few things but sufficed to say it was all FABULOUS. The staff is great. Everyone was so friendly welcoming and they really know their menu, food and wine. WE’LL BE BACK. Our only regret is NOT getting here to dine months ago when we first heard about it.
