We were passing through Evanston and found Pancho’s on Google Maps. We are so glad we stopped here!
We ordered a bean and cheese burrito, a smothered beef burrito, and 2 enchiladas. It reminded me of the Mexican food I used to eat in Southern California and it took me back to fond memories by the beach.
We will definitely eat here again while passing through Evanston!

My go to’s are the carne asada fries burrito, birria burrito, and bacon breakfast burritos. The habanero hot sauce and green sauce are delicious. Reminds me of a taco shop from San Diego. Awesome food.

Stopped on a XC trip and wow, we concur with the reviews that Pancho’s food is fabulous! We chose the four street tacos special – one each of their meats. My husband exclaimed, these are the best street tacos I have ever eaten, including in Mexico! Scrumptious! Generous portions too. 10/10 recommend.

We had called ahead and ordered breakfast. One burrito was sausage and egg. Mine was chorizo and egg. We had requested NO potatoes on the chorizo one and LIGHT potatoes on the sausage one. Both, after opening them at home, were primarily potatoes, with little meat in the ratio. Furthermore, the chorizo was dry and had little flavor to offset the heavy potato flavor. There were also no veggies in them and we were told that wasn’t an option with breakfast burritos. I would not have minded a smaller burrito, if it meant no potatoes.
On the upside, when I called in, the gentleman on the phone was polite and offered me a replacement, if I wanted to come get it. This was after stating that the manager was not on site. Coming back wasn’t an option by this time, so I declined the offer. My hope by posting this is that they will be more mindful in the future when people make specific requests, and maybe offer other veggies with breakfast burritos
Side note: I do miss AZ Mexican food, and was hopeful for the flavors I am used to.

Ah, Evanston Wyoming’s glittering gem of boots, motels, porn stores, and more neon signs than should be legally allowed. Naturally, amidst all that cowboy chaos, I found myself at Panchos, chasing the elusive dream of good Mexican food.
The enchiladas were pure magic, like a mariachi band serenading my taste buds while wearing sparkly cowboy hats. But the real star? The bathroom. Let me tell you, it was spotless until I, fueled by a chimichanga of divine proportions, delivered a bowel movement so glorious it probably registered on the Richter scale. Sorry, Panchos. You were too good to my digestive system.
Five stars for the food, the vibe, and for Evanston itself a place where you can buy a burrito, a cowboy boot, and a dirty DVD all in the same block. And don’t forget to buy fireworks on your way back to Utah!

Would give them no stars if I could. Where’s the meat in my $11 burrito? And $3 for a cup of queso and they send me 2 cups of shredded cheese. Never again.

We patronized Pancho’s in Rock Springs on a fairly regular basis and were psyched when they opened a location in Evanston. We get dinner there about once a month and have never been disappointed in the quality or quantity of the food. Hubs likes to the get the mixed fajitas, I like to try different things, but every time, the food is served nice and hot and in generous portions. I particularly like that their flour tortillas are made the traditional way, and they offer red, green, and avocado salsa. The folks that work there are friendly, and the prices are reasonable. We’re usually able to make 2-3 meals out of the typical carry out order (they have dine-in and drive-through as well). Several restaurants have tried and failed to make a go at this location, the former Wally’s Burgers, but Pancho’s appears to be here to stay. I got no problem with that!

We picked up an order to bring to the hotel. Service was great! Food was ok. Good portions. I appreciated the cleanliness and the small touches that show the owner and/or the employees care… like this bathroom with its nice artwork. Clean, but they forgot to leave soap in there.

Love this spot.
We travel from Utah to Colorado several times a year to visit family and this is become one of our staple meals on the way.
Don’t you dare think about going anywhere else in this town!
