THE most delicious food from a food truck I’ve ever had in my life. You will not be disappointed!! The shrimp taco and almond chicken sandwich are tied for my top favorites from the regular menu, however the specials (which change weekly) can’t be overlooked. They have outdoor seating at picnic tables away from the road which allowed my 2 year old to run around while we enjoyed a nice meal.

I can’t believe I wasted years driving past this food truck and not checking it out! You absolutely MUST follow them on Facebook to see when and what they will be serving. Typically they have a steak and shrimp or other nice meal on Monday evenings ($15 including tax!), a family meal on Wednesday evenings ($12!) and – my favorite – Friday lunch. Sometimes (not often enough for me) they have shrimp tacos on Friday @ $4 each. And they are the BEST shrimp tacos in town. The owners are incredibly kind people. Every couple of months they serve a meal that is free to anyone who needs it, no questions asked. Who does that?? Bottom line, their food is incredible, their prices are unbelievable and just being in the presence of these people makes you feel better about the world.

This is probably the most overlooked place for food in South Huntsville. The owner is a Christian based chef who prepares excellent food day in and day out. I have never had anything other than an excellent meal at a very reasonable price. This is NOT a food truck. It is an exceptional restaurant on wheels!

We love salt n light and eat here multiple times a month. You get so much food for the price and it tastes better than most south Huntsville restaurants. Only thing that is less than ideal is that meals must be ordered ahead of time via Facebook comment in order to guarantee there is food for you.

Wow! Been meaning to find time to try this truck out and got my chance last Thursday. My mom and I were shopping in the area trying to prepare for a trip out of town and we decided we’d go split lunch when we learned they were serving. We’d tried and failed to get lunch a few weeks earlier, so we were excited the time worked out for us this time.

The truck parks exclusively in a parking lot just off of Bailey Cove Road, the lot next to Nick’s Ristorante. I wanna say it’s in a church parking lot, but I can’t quite remember what the building’s sign said. They’re very reliable about posting on social media about their hours for the week – their Instagram handle is currently salt.andlight513 if you’d like to look them up.

Their menu typically has sort of gourmet takes on American cuisine – mainstays include almond crusted chicken, a fancy burger, shrimp tacos, and an Italian beef sandwich. They also tend to have weekly specials. If you follow their social media, they will post about their dinner options — usually family meals like chicken Parmesan and pasta, pork loin, etc.

Prices are really great for the quality, creativity, and portion sizes, especially considering mom and I comfortably split a burger and trailer fries + two cokes for lunch and it was only about $14. Family meals are usually ~$45 and feed four people, which seems like a good deal to me.

Another special thing about this truck is the service. They seemed to know all their customers by name, and greeted them as such. They knew their preferences, too — no onions on your burger, right, Mrs. so and so? — which was really cool and uplifting to see. Speaks to a great product and warm environment that brings people back.

We were greeted warmly and we placed our order. They offered us both strawberry shortcake cookies to go with our meal, free of charge. It was especially generous to give us two, since we only ordered one entree.

Like I mentioned earlier, we split the smash burger: a thick cut patty smashed down, covered with American and pepperjack cheese, seared onions, lettuce, pickles, and a mustard aioli. We got our pickles on the side because I don’t like them but mom does. We also ordered a side of trailer fries, which are cubed potatoes fried up to a crisp and dusted with I presume a light coating of Parmesan. They also had a faint, pleasant sweetness to them – it almost reminded me of balsamic vinegar but I couldn’t say for sure. They were lovely!

The burger was phenomenal. Bacon wasn’t listed on the menu description but it was on there, much to my glee — smoky and crispy. The patty was juicy, so flavorful, and the aioli brought just enough moisture and tang. The fluffy soft brioche bun held up well to the meat, and I loved the two kinds of cheeses. I believe this is now my second favorite burger in town, which is a major honor.

Our bonus strawberry shortcake cookies were not overly sweet, perfectly soft and chewy, with real strawberry flavor. They were the perfect size and a lovely surprise.

Can’t wait to find an opportunity to visit these lovely folks and eat their delicious food again! Seriously, give this truck a try.

Stopped on a whim. Had the Almond Chicken sandwich with fried potatoes and a bottled water, $12. Food was tasty and filling. Somewhat of an Asian tilt on the flavors, maybe a sesame sauce? Different from the average lunch fare. Certainly worth a try!

Stopped in for dinner.. wow were we blown away. I got the Steak and Cheese and the Trailer Tots as a side. The Trailer Tots were phenomenal. Also, you won’t leave hungry, the portions were giant! Will definitely visit again.
