Lobster lab is amazing! We had the Connecticut lobster roll and the lobster grilled cheese with the lobster bisque, both were plentiful and delicious. The co-owner, Ridvan, is there often, hands-on, and very warm and friendly. It’s located inside the windmill food hall, which has other dining options as well as arcade games, and a bar too!

The warm lobster roll with garlic butter is the best I’ve had on the west coast. Not claiming to be an expert, but being from the northeast, I’ve had plenty a Maine lobster roll and this roll was generously filled with fresh, large chunks of lobster & claw meat and NOT overcooked or rubbery. The bread was also really high quality, dense, just sweet enough, and perfectly toasted.
Ridvan, who took our order, was super kind and happily gave us a detailed run down of all the dishes, which helped us decide, and he didn’t steer us wrong.
The lobster grilled cheese with bisque on the side was totally decadent and the classic cold lobster roll with mayo also had a unique, fresh, creamy mayo based dressing that was fantastic. We’ll definitely be back to try other things. Compliments to the chef and thank you for making our day with a really delicious meal – appreciate you!

I’ve gotten lobster rolls up and down the West coast. Vancouver BC to Seattle to LA to San Diego. The lobster roll at Carlsbad Lobster Lab is The Best I’ve ever had. The Best! The lobster is sweet, not salty. The roll is wonderfully warm and soft and buttery. Perfection! The sprinkle of greens on top is a beautiful touch. The owner and the staff truly care about the food and the presentation. It’s the greatest!!! Worth every penny. If you love lobster, go there!

OK, this almost got derailed! We saw the Lobster Lab (a weakness of this New Englander) and walked into – a gourmand’s paradise of small boutique restaurants, colocated with a big-arse bar/patio. Everything looked fabulous (as it does when hungry!) A blood-orange beer helped me focus, back on the lobster rolls. And oh, were they done to perfection. Lightly toasted rolls with a hint of sweetness, lemon, butter, lobster and love. My son had shrimp, but I am not responsible for his eccentricities…

Oh my gosh I think I just went to lobster heaven! We stopped by inside the Carlsbad Windmill Food Hall. First time here and we ordered the lobster roll and lobster grilled cheese sandwich with a side of lobster bisque. This is BY FAR THE BEST lobster sandwich I’ve ever had in my life!!! The flavor was on point, and the lobster portions are generous. Tera was such a great person to explain everything such as their best sellers and that their chef does wonders for the prep and execution. I will definitely be back here for multiple trips. Worth the drive for me. I’m leaving completely satisfied and happy happy happy.

We made the trip from LA just to try the Lobster Roll, Lobster Grilled Cheese, and Caviar—and it was totally worth it. If you haven’t tasted these amazing flavors yet, this spot should be at the top of your list. The portions are generous and the dishes are as beautifully presented as they are delicious. We’re big fans of Lobster Lab! Also, they provide moist towelettes, which is something I haven’t come across anywhere else in the U.S.

We came here from LA just to eat Lobster Roll, Lobster Grilled Cheese and Caviar. If you haven’t tried these flavors before, this place must be your first stop. Menus and portions are very filling. The presentation is as wonderful as the flavors. We love Lobster Lab! They are also giving moist towelette, I’ve never see this anywhere in USA.

The lobsters roll is amazing!!! The chef is very passionate about their food. I ordered the crab roll as well with mayo On the side and he gave the great point that the crab roll with mayo Soaks the flavoring into the protein, so learned something new while enjoying the food!!!
