Proof Gatropub is a must visit if you are in the area. The staff is incredibly friendly and knowledgeable. The menu is full of great choices but I have been craving one of these burgers since i first saw them on social media. The Proof burger absolutely did not disappoint. The 3 hour slow cooked onions and the bacon almost steal the show but the perfectly medium cooked and seasoned angus and ribeye blend beef shines through every bite. The french fries also no slouch perfectly cooked with a crunchy bite and their nice house made fry sauce is elite. This place also has the best views from their third floor dining room, i cant wait to eat on the patio this summer. 10/10 burger guy approved.

Another restaurant that charges 3% credit card fee. The view from the restaurant was nice, only if you sit by the window or outside. There is an elevator to take you to the top floor. I had the smoked pork nachos, they were very tasty. I liked the cheese they used. I had fish and chips. COD wasn’t fresh but more likely a frozen item that was deep fried. You can tell. I took some bites. Didn’t take any leftovers. The sweet potatoes fries were delicious. My drinks were good. La Paleta I recommend.

I used to really love the place. I can always say the food is great; however, it was the first time I had a bad experience here. My boyfriend and I love proof for a date night out. They never disappoint with food or service. However, we came to this location on a Saturday night, did the usual routine, checked in and sat in the lobby. As we sat in the lobby, parties who arrived after us were instantly seated. I understand there are reservation options; however, two couples next to us who also had a wait time of 20-25 minutes then were seated before us. It’s until a host or waitress who is consistently going back and forth from both areas of the restaurant finally decides to ask me what my name was (this was after 20 minutes) I told her Ashley, and let her know we never received our text message that our table was ready as the host mentioned. She said “ok let me check on that for you” 10 minutes past, she comes back to let us know we were never added to the list. She wasn’t sure what went wrong & told us it would be another few minutes. We are very patient we understand restaurants become busy but again more parties come on through and are seated for the next 10-12 minutes before us. Finally after the long wait of 45-50minutes when we were told 20-25minutes, we finally got seated..but seated in the worst area of the restaurant that i never even knew existed. We were seated on the second story, in the middle of a small crowded room, with a VERY large party. A huge light on top of our heads, very bright, pipes behind us. It was not a delightful experience at all. After being seated we still had to wait about another 15-20 minutes to order or i should say even be greeted by a waitress. We were completely forgotten about and at the bottom of their list. Mind you this included no water or utensils after being seated. it ended up being so exhausting just to get a good dinner in. She finally comes to us, and The waitress seemed very overstimulated and just not very attentive. Kind of anxious, and chewing gum very obnoxiously. There was nothing great about the second floor. It felt like we were being separated from the rest of the parties. Luckily, as I mentioned previously the food is always great. However, as much as I love the food I don’t think I would want to attend this location again. We said to give it one more try, but instead at the pasco location. Only it was worst there, you walk in and instead of saying greeting diners, they instantly ask for ID. “this is 21 and over , are you over 21???”
I really miss this food but I don’t know if it’s worth being forgotten about.
We have been to this specific Proof Location about 5-6 times before this experience. It was disappointing, i only gave this 2 stars because KUDOS to the chefs.

We went on a busy lunch hour and the place was packed but they still got us in pretty quickly and communicated with us really about our table and wait time. I had a classic burger with bacon and it was really tasty. The mac’n’cheese looked really good as did the pork belly Tacos. Overall great time! Hats off to our sever who was very busy but still served us with kindness

Had a wonderful lunch date with my wife at Proof Gastropub. The food was exceptional, but one drink stood out above all else. My wife asked Brandon (the fantastic bartender) to make a Gin-based cocktail, and received her new favorite drink. He presented an amazing version of the Prohibition Bees Knees. The lavender color and hint of vanilla on the lemon wheel pairs with the mild sweetness of honey and gin in a phenomenon you MUST experience. My wife had three and said she could have spent the afternoon drinking them. Proof might be our new regular date spot because of this drink.
The chips and guac, fish and chips, and old fashioned were also great. Give them a try, and I think you’ll find yourself satisfied at the end of your meal.

Had a lunch date here today. The service was amazing. Our waitress, Juliette, was an absolute doll. We ordered the Bees Knees drink and it blew our socks off. We ordered a second one before the first was gone. It tasted like a chocolate cake shot in drink form. Superb. I ordered the Killer Mac and my husband ordered the Blueprint burger. My Mac was out of this world. The chicken tasted like you grilled it at home. I actually ordered a whole other Mac dish to go it was that good. My husband said the blueprint was the best blu cheese burger he has ever had and he orders one anywhere we go so he knows his blu burgers. I’ve never seen bacon so thick on his burger. It was like a whole slice of pork belly. Oh and the garlic parm fries with the garlic aoli dip was bonkers together. The weather was gorgeous so we sat on the balcony to eat. Everything about this place was 10/10. We enjoyed ourselves so much. We will be back. Go try it I promise you will love it.

Much needed restaurant in the Tricities! Small gathering of 8 and nobody was disappointed with the food. Mussels were so tasty and not rubbery. Wife said this has to be the best burger she’s had in 5 years, I had a bite and have to agree it’s top notch. I had a rib eye which was perfectly done with amazing presentation. Cobb salad was fresh and crisp with tender chicken on top. Daughter had buffalo wings which blow away any wing in town. Dirty martinis were generous. Service was superb. They have a nice presentation room upstairs that could easily hold 20. Can’t wait to come back again!

Update September 2025: Not sure what happened but if this had been my first experience I wouldn’t be back. The server wasn’t helpful at all. My salad was rusty. The staff just seemed like they wanted to go home.

One of the few places that is open after 8pm as sad as that is this place is pretty dialed in. Quick service, nice staff, and good food make this a solid choice. Several beers on tap, wine, and mixed drinks. On the third floor but there is an elevator if needed.
