Located in the center of Waimea Town, FORC sits in front of the historicWaimea Country Lodge. Our style is open, relaxed, ohana-friendly, and full of Aloha. There’s a bar area, indoor/outdoor seating, main dining room, and separate dining room available for private events. Offering renowned Chef Allen Hess’ flare on a traditional country kitchen with a few dishes paying tribute to classic local favorites starting with Happy Hour, and Dinner. Dinner takes a fall break every September so join us for Brunch instead! Allen Hess expanded on local land and sea offerings and developed menus both distinctive and creative in his newest restaurant. The evolving menu aims to provide returning guests a new culinary experience with each seasonal visit.

Absolutely the best meal we have had in many months- by far the best meal on This island. The service was attentive and friendly, the atmosphere was lovely yet relaxed and the food was phenomenal. The fish was cooked perfectly, the flavors and sauces were exquisite, the asparagus was tender, Fresh and had the perfect crunch, the plate presentation and the whole experience was done right. Light and airy restaraunt which we visited during happy hour. Goat tacos (quesadilla) gamey, hamburger sandwich dipped in au jus was our favorite and the butterleaf salad was perfect but also pricey. ($16). Wife loved the pineapple martin (had 2). We want to try regular dinner service.

Without hesitation, FORC is our favorite restaurant on the Big Island. Chef Allen prepares meals that taste amazing and are beautifully presented. He is an extremely talented chef and it’s always a treat when we visit his restaurant. We recently had a birthday celebration there with 17 guests and Chef Allen served us a beautiful dinner with a salad and sashimi appetizer, steak, braised beef ribs, and moi (fish) with asparagus and other sides, along with baked bread, wine, and a terrific birthday carrot cake. If you are looking for the best food and dining atmosphere on the Big Island, FORC is the place to go.

Solid dining experience. Love the small menu. The sashimi was the absolute highlight. Delicate fresh fish paired with the tasteful wasabi sauce and the refreshing pickle slices on the side. The goat birria was a miss in our opinion. For birria it’s missing spices and bold flavor. Miso butterfish is of good quality but could use stronger miso flavor. Ribeye loco moco used very good steak. We ordered the macadamia nut tart for dessert but taste like something from a supplier; it’s not bad tho. Overall you can definitely taste the quality of ingredients. Some items were very good and others were just on par. If you are in the area I would recommend giving this place a visit

Amazing! We were craving a good steak in cattle country. FORC had good reviews so we tried it.
Each of us ordered the FORC Ribeye medium rare and we’re delighted.
The combination of flavors dazzled our tongues with every bite! Our adult beverages were outstanding as well. Great unique flavor combination.
The picture was taken after digging in so it does not represent the beautiful presentation.
The waitress was lovely and professional. We were underdressed for the quality of this place, it’s classy fine dining!

Fabulous martini – Coconut Lavender! So special. The braised beef was yummy! The Adult Mac & Cheese was total surprise and GREAT! The Goat Meat/cheese Tacos were also amazing! The Butter lettuce Salad with Goat cheese & buttery pineapple dressing made my meal. ALL LOCALLY SOURCES!

How did I miss this place? After numerous visits to the Big Island I finally made it to FORC which cleverly stands for Farmers, Ocean, Ranchers, Cooks. Our server, Nanaia, was exceptional. We started off with 2 different tasty cocktails, wailea ranch water and a spicy Margherita. We then shared the oyster appetizer and a salad. We were thinking of their Miso butterfish entrée but ultimately both had their signature Kau coffee encrusted NY strip. The steak was so delicious that we made reservations on 5he spot to return 3 days later something I had never done before. When we returned the server immediately recognized us and waved from across the restaurant. She even remembered our drink preferences from the previous visit. We were treated like we were regular local diners (of which there were many dining) and this time my wife had the Miso Butterfish and I had a NY strip repeat. The butterfish was flavorful and perfectly cooked. Two very enjoyable meals. Highly recommended!

Had a great experience here. The staff were friendly, flexible, and accommodating with our party, which had to reschedule and adjust group size a few times.

I was very happy with the food. Every dish we had was grounded in tradition but exhibiting tasteful innovations. Altogether a delicious execution of the farm-to-table style.

I’m sure the tasty cocktails and colorful platings contributed to the atmosphere, which I found elegant but not stuffy. If I had the chance I would love to come back to try their menu again as the seasons change.
