I smoke meat as a hobby, and I was happy to see them smoking their brisket on a Big Green Egg.
The sides are great as well. The collard greens have a vinegar kick (as they should and often most places don’t) and the “sweet coleslaw” is creamy, which surprised me a little as I was thinking it would be vinegar based…not a bad thing…it was good.
The ribs are true half slab and the turkey leg is beautiful and large.
Located at the corner next to the tiki bar. You can smell the Smokey goodness coming from the huge smoker/grill as you drive by. We had to eat there before we left Top Sail because we love a good bbq and we love food trucks.
The pit master/owner/operator is the nicest and friendliest guy you will ever meet. He will have die hard introverts chatting up a storm with him in no time. He was a genuine, nice guy.
The food…
Let me start by saying I’m not a bbq expert. I don’t know much about cooking ribs or how the ribs and sauces are made. Frankly, I don’t have the time, know how or the patience to cook great bbq so I let the experts do that. But I do know what tastes good and what’s not so good and everything we bought from Big Bs tasted good.
Baby Back Ribs
We got home and started unpacking our bounty. The ribs were wrapped in foil and upon opening the package, we were presented with a beautiful rack of ribs. This is not a dry rub bbq, which I’m not a huge fan. This rack of ribs was nestled in bbq sauce. The sauce itself was just right, it wasn’t too sweet which a lot of places seem to overdo. The sauce should compliment the meat not overpower it. The meat was fall-off-the bone good. It was tender all around. Forget about using a knife to cut ribs off, you’ll need a fork because heaps of meat just falls off. The nice thing about these ribs was that there were no tough spots. Usually on the top of the ribs, the meat will be a little tough. These ribs didn’t have that. Let’s just say, this hit the spot and has staved off my bbq craving for a little while. We had leftover ribs and let me tell you, I’m looking forward to putting the rib meat on a roll and eating it that way. That’s gonna be good!
Potato Boats
This fascinated all the members of my family. My wife and kids are huge potato lovers and this intrigued us. We’ve never had smoked potato before so we were all looking forward to this. This is a meal on its own so don’t think it’s an appetizer (it could be if you’re really hungry). It’s a big smoked potato that’s been covered in butter, cheese, sour cream and bbq pulled pork. The potato itself was done to perfection. It was tender and not mushy and had a nice consistency to it. It wasn’t like a traditional baked potato that can easily be mashed by your fork. It was more solid than that but fully cooked. All the other ingredients on top, was gravy, so to speak. This was a big hit with everyone. I love ribs and I can usually put away a rack of baby back ribs all by myself. After eating the potato and ONE rib I was done. I was too full to eat any more. Now I’m not as crazy about potatos like the rest of my family but this was good and I would get this again.
Mac and cheese
My daughter loves Mac and cheese and she loved this. I’m not a big fan of Mac and cheese but I sampled some and it was good.
All in all. It was a great meal. One of the best we’ve had during our stay. If you have a craving for bbq, Big Bs will not disappoint. When we come back to top sail, this will be on the top of our list of places to eat.
