I’ve moved out of Chicago and have since been looking for legit Italian Beef joints outside of Chicago on my travels. I’ve tried dozens of places with all of them not even close to the real deal that Chicago area restaurants produce. This trip, I came across Chi Shack, and spoiler alert- I have finally found an amazing Italian Beef joint outside of Chicago!
The Beef had the thin juicy slices of meat, the roll was the right texture and chew, and the giardiniera was crunchy and had a beautiful kick of flavor explosion. Usually I don’t care for cheese on my Beef but this was a fine touch and the whole thing was gloriously baptized in au jus. It’s the real deal.
I also ordered the funnel fries, tasted great and was a real cool take on funnel cakes.
Best of all, the workers and owner were really thankful, and nice and you can tell how much passion they have for what they do. The owner loves to chat up Chicago Sports and Chicago food.

We had Mark and crew come to our property to provide lunch to our employees and it was awesome and absolutely delicious. These guys were authentic and you could truly feel their passion for all things Chicago. It was such a great time getting to meet and know these guys. Thanks again y’all!!!!! See ya around! Mark Ramos has brought a type of food that makes your mouth water. There are very few, if any, food trucks that bring the flare from Chicago that Chi Shack does. Mark is passionate about the product he puts out to the customer. He ensures that the juice meets and exceeds his expectation. I had the Italian Roast Beef that was juicy, full of flavor, and most importantly delicious.

We hired Chi-Shack for a corporate food truck night in Vail. Mark and his team did a great job! The variety of different brats and dogs and toppings was delicious and they even brought fries and canned sodas to go along with the meal. Mark was really responsive when booking the event and flexible with pricing. Highly recommend!

Been here a few times now. This place is insanely good. The owner/chef, Mark, is the homie, originally from Chicago, full of good vibes. About as authentic as you can get. Always hooks it up with generous portions and high quality beef and dogs. The single best cheese fries I’ve ever had in my life. 10/10 would recommend.

My wife and I moved from Chicago years ago and as much as I love Colorado the one thing missing is an amazing Italian beef… not anymore!! Chi-shack is authentic and really good, thank you Mark for bringing the taste of Chicago to our amazing Vail Valley food scene. Don’t skip the funnel fries the taste like a carnival!

I consider myself somewhat of an expert on Chicago beef, and I have to say this food truck was as authentic as you can find. I have tried numerous places in the Denver metro area that claimed to have authentic Chicago style Italian beef, and they fell far short of my expectations. While eating my combo, I would’ve sworn I was at Portillo‘s. Chi Shack is a must.
