Once again, this experience reminded me that the world’s greatest restaurants truly operate on a different level. Rather than simply eating a meal, it felt like experiencing an entirely new world.

Through the stories of Peruvian history, local ingredients, and cacao, I could genuinely feel how deeply passionate and devoted the team is to their cuisine. Dining there felt like studying history and storytelling inside a living museum, where each dish carried meaning and purpose.

It was a truly profound and moving dining experience. Without question, this is a restaurant that should be experienced at least once in a lifetime.

On our trip to South America for an Antarctica cruise, we made a stop over in Lima just to try out Central, which has been on our wish list for quite a long time. And what an amazing experience it was! Food was delicious as expected but what really impressed me was the creativity with which the ingredients were transformed from it’s original state into something extremely unexpected. It was a journey through Peru, with unique ingredients chosen for each dish based on the altitude. My favorite was an item with a bread like consistency that was made completely from different kinds of sea weed (including a sweet glaze that went on top!). Truly incredible! The dinner was thoughtfully curated and attention to details was fantastic. The drink pairing had a mix of unique aperitifs/digestive they create in their lab and South American wines. We also got a quick tour of their lab where they work through these transformations and got to meet the chef and his culinary team. I am pescarian with allergies to some specific mollusks, which they handled extremely well. I did not feel like I missed out on any experience due to my food allergies. Place books out pretty quickly as soon as they open up reservations (I think around 3 months in advance).

If you’re looking for a dining experience that educates, surprises, and stays with you long after it’s over, Central is truly exceptional.

We opted for the Immersion Experience and would highly recommend it to anyone considering a visit. It offers a behind-the-scenes look into the team’s creative process, transforming “dining” into a deeper, more meaningful exploration. The private interactive tour itself was the highlight for us; the meal that followed was the cherry on top.

I was especially impressed by how much care the Central team put into showcasing local ingredients and researching new ways to use them. At first, I wasn’t expecting the tasting menu to be conventionally “delicious,” so was pleasantly surprised by how flavorful and cohesive every dish was. Each course demonstrated a genuine respect for Peru’s biodiversity.

Thanks to the thoughtful and engaging staff members that guided us through each element of the experience, we left with a richer understanding and appreciation of Peru’s ecosystems and culture.

What an experience!
From the warm welcome to the goodbye, everything was absolutely top-notch. Due to a cancelled flight I missed my original booking and had to cancel last minute, but the staff at Central were incredibly helpful and managed to move my reservation to another day for lunch without any issues.

The journey through Peru was amazing, and I tasted flavors I didn’t even know existed! The presentation & plating was one of the best I have ever seen and the wine & non-alcoholic pairing was amazing!
All the staff were extremely warm and welcoming but Arianna made our lunch experience extra special!
We will definitely be back. 🙂

I had the “Mundo en Desnivel” tasting menu at Central, and it was honestly one of the most interesting dining experiences I’ve ever had. Each course represents a different Peruvian ecosystem, so the menu kind of walks you through the country’s geography in bites.

A few impressions:
• Extrema Altura (4750m): Very clean, almost icy flavors — cushuro and roots. It really sets the tone that this meal is going to be different.
• Norte Seco: Loved the textures here. It had this warm, aromatic feeling from the herbs and maize.
• Sabanas Amazónicas: One of my favorites — super fresh, bright, and slightly fruity from the Amazonian ingredients.
• Rocas Negras: Smokier, more mineral. Felt very “volcanic,” if that makes sense.
• Selva Cónexión / Suelo Cénebre del Mar: These were the seafood moments, and they were amazing. Delicate but full of flavor, with things like conchas and local sea herbs.
• Valle Sagrado & Bosque Andino: Earthy, comforting, more “homey.” The corn and Andean grains stood out a lot here.
• Mil Moray: A transition into dessert, with tubers and fruit in a really interesting combination.
• 100% Cacao: The finale — intense but not heavy, very floral cacao.

Overall, it’s not a “big flavors” menu — it’s more subtle, thoughtful, and very tied to the ingredients. The servers explain each plate, but not in an overwhelming way. You end up learning a lot without feeling lectured.

I visited on January 7, 2016 at the old Miraflores location, which was a serene setting with precise, attentive service. The tasting menu explored Peru’s geography and ecosystems, with each dish grounded in deep research and a clear sense of place. Ingredients and techniques reflected specific altitudes and regions, resulting in bold, unexpected flavors. A highly creative and memorable experience that leaves a lasting impression.

The restaurant is known for its contemporary interpretation of Peruvian cuisine using modern techniques. Each dish represents a specific Peruvian ecosystem, defined by altitude, ranging from below sea level to the high Andes. Central was crowned the world’s best restaurant for many years.
The tasting menu typically features 12 courses.
The dishes were “academic”; beautifully crafted but not always memorable in flavour cohesiveness. The experience is experimental with lot of effort in carving visually appealing dishes but the final outcome is confusing. One leaves without understanding what food did he have.
The dining room is bright, minimalist, and open, with stone tables, floor-to-ceiling windows, and an open kitchen
