I noticed Della’s next door with a full bar and our hostess mentioned they share the same owners, so we hung out there until our seats were ready. A little later she came to get us and sat us at the bar, exactly where we wanted to be!
I really love the vibe here. Yes, it gets loud and lively, which might not be for everyone, but I love that whole energy. It’s intimate and fun at the same time. Chandler, our bartender/server, was fantastic. He was busy but still on top of everything and made us excellent cocktails.
For Starters we ordered:
Grilled Maitake Mushrooms:
As a mushroom lover, this was EVERYTHING! These were clean, earthy, nutritious, and prepared perfectly. Believe the rave reviews, they’re so soooo good!
Hot Skillet Cornbread:
Delicious! Warm, comforting, and my boyfriend is still salty Chandler took the skillet with the last slice he was saving for “dessert.” LMAO.

Half Rotisserie Chicken:
My boyfriend’s order. Flavor was great, but the chicken was a little on the dry side. The two sauces it comes with complement the dish perfectly though.

This place books out for a reason! It’s easily one of the most popular restaurants in Paso.
We had an excellent experience all around. Amazing food, great service, lively atmosphere. This is an easy favorite and absolutely lives up to the hype!
Our server was polite, & very attentive, checking with us at least 4 times, until we’d figured out what to order.
I wasn’t particularly famished, when we arrived here, because we’d just eaten scallops & a crudite’s platter at Daou Winery, during our 2:30p.m. Tasting. After eyeing the Hatch menu, I chose something on the lighter side- a 1/2 Rotisserie Chicken.
Before this came out, my partner & I split a Blue Cheese Wedge. I was underwhelmed by the wedge salad, which I felt, for the price, needed more bacon, & perhaps some Balsamic & some whole mini tomatoes, on it.
Our best friends ordered the Hot Skillet Cornbread- light, with crispy edges, along with a slightly sweet flavor.
The server uncorked a bottle of Booker 2016 Vertigo, which our friends had purchased earlier, in the day. After a few minutes & sips, our conversations around the table shifted a bit, to the wilder side of things.
Good food takes time, so by the time we’d finished our delicious wine, all 4 Main Courses arrived, to our table. They all looked spectacular!
My 1/2 Rotisserie Chicken must’ve been Arnold Schwarza-Chicken, with huge plump pieces of crispy-skinned chicken. The first taste was a revelation- Wood-smoked BBQ flavor, with a masterfully-cooked succulent & tasty meat, inside. I loved my meal.
My partner chose Monday’s Daily Special: Chicken Pot Pie. There are 7 fine meal choices, changing every evening. She loved her dish, commenting on the perfect crust, & deliciously creamy filling inside, filled with large chunks of chicken.
Our friends chose Shrimp & Grits, & Grilled Skirt Steak, respectively. Each of them loved their meals, which looked as impressive, as they tasted.
The Daily Special, as I mentioned, changes each day, & I missed Fried Chicken-one of my favorites, by 1 day. Another of my favorites, Prime Rib, was offered another day, so perhaps research this, if you’re craving something special, that’s not on the regular dinner menu.
Definitely make reservations for dinner, at The Hatch Rotisserie & Bar. They offer an impressive list of alcoholic drinks here, which none of us sampled, this time. Also, there’s no corkage fee, should you decide to bring in one of your favorite
Paso wine bottles.
I gave The Hatch 4 Stars, for Atmosphere, simply because this is a small space, with tables laid out closely together.
Everything else about this restaurant, I loved!
Service – Was very slow, it took 10 to 15 minutes for a waiter to show up at our table as well as the tables around us. After we finally placed our order the food came relatively quick.
Food – We had the rotisserie chicken which is available daily, they also have rotating specials throughout the week unfortunately the chicken was overcooked and dry and the meager sauce portions they give you wouldn’t have helped it anyway. We also ordered the broccolini and both thought it had too much of a smoke flavor. The brussel sprouts were tasty, and enough for two or three people to share. The portions generally seemed generously sized to share.
Ambience – We went in the winter and every time the front door opened a breeze blew into the restaurant. There was a curtain installed inside, but it did nothing to help and was left open by everyone. Everyone was wearing jackets because it was so cold. They really need to do something to keep the cold air out in the winter.
