As far as the atmosphere, I appreciated the low noise level which allowed for actual conversation while dining. This seems to be getting somewhat rare at restaurants these days, and it was a noticeable pleasure!
My only suggestion would be to incorporate a few vegan options and augment the vegetarian options. Otherwise, no notes!
Did not take long for it to be a spot we regularly go to.
Owner operated by a couple- Chef Greg and Monika who tends the bar, making incredible cocktails, and manages the front of house.
The chef creates interesting and delicious dishes. BBQ is wonderful with their own sauces. Still working through the menu to try all the dishes. Also open at lunch!
The bar is a complete delight. A true neighborhood community bar where conversation happens amongst strangers and everyone shares in their love of Monika, Greg and Fuse.
Service is always professional and friendly. Ambiance is creative and fun. We are super grateful that we are able to walk to it.
Loved that we had “My favorite neighbor” as a wine one evening – so appropriate for my review of Fuse Gastrobar!
Our bartender, Monica, was incredible. She was so kind, attentive, and made us the most amazing drinks, truly elevated the whole experience. I’m not sure if Monica is an owner or not, but it honestly felt that way, she cared so much about every detail and about making sure everyone had an amazing experience.
Now for the food… wow. My husband and I shared the BBQ bao (two pieces), filled with smoked pork belly, kimchee, pequin aioli, roasted cashew-peanut purée, hoisin, all tucked into perfectly steamed buns. Every bite was packed with flavor.
We also ordered the scallops & smoked pork belly, which featured pan-roasted U-8 day-boat diver scallops, braised heritage pork belly, spiced black bean ragout, roasted chile aioli, goat’s milk crema, roasted maduros, and a fresh tomato-avocado relish. It was absolutely phenomenal. We cleaned the plates, every single bite was that good.
Beyond the food and drinks, the energy in the restaurant was just amazing. Everyone around us was so happy and friendly, and you could feel the good vibes all around. It was our first time at Fuse, but without a doubt, we are now permanent customers. We completely fell in love with this place and cannot wait to come back!

At the bar, Monika consistently crafts some of the best cocktails in Naples. The diverse menu keeps my wife and me coming back, as there’s always something new and unique for her to try. We usually start with the BBQ bao buns, kangaroo, or tuna poke—all outstanding. For entrées, I stick with the classics: ribs, tuna togarashi, filet, pork belly, or the fresh catch. You can’t go wrong with any of them.

The burger was nowhere near the quality it should of been for the price of 34 bucks.
The patty should of been more flattened to accommodate the bun size, not a over size meatball , also seasoned better, at the most a 16.00 burger. But named “millionaire burger”.
Bbq beans..way under cooked, the beans were hard not soft as most bbq recipes call for.
Coleslaw was doable but not in my top 20.
Chicken breast was dry.
Brisket was decent flavor but on the drier side. Ordered a full pound.
Corn bread was good and the butter matched .
Service at first was informative with the answers we needed ..but after it dropped off unfortunately the food came out pretty slow , a few mistakes on the sides which were corrected.
Overall I believe I got scammed by the word ” bbq” in the name . Hoped for more of a bbq type place .
I passed up 4 other restaurants with bbq menus.
Oh well lesson learned .
Also mind you , my son and I bought the burger and brisket the rest was sides and 1 chicken breast for the 3 women,and 1 cocktail ..the bill was 152.00 . Not happy but if your looking for a bar . Enjoy
