Tucked into the corner of a Seattle Hill strip mall, the Bamboo Bowl has changed ownership over the years, but if you haven’t visited recently, you should know that the Bamboo Bowl is now better than it’s ever been, and worth revisiting if you’ve not eaten there lately.

The servers and staff are incredibly friendly and welcoming. The decor is minimalistic, but with a well-lit, clean attention to detail that presents an overall sense of peace, including subtle touches like the wooden light fixtures which add a nice ambiance. Seating is a mix of tables and booths.

Pho comes out hot and steaming. While the brisket pho is good, and would be enjoyed on its own, the beef rib pho is a show-stealer. Soft and tender, rich and flavorful, this is probably what I’ll be ordering next time. Unless I’m ordering something else – from other reviews it seems the other pho options are where Bamboo Bowl shines.

Stumbled out of the house after a brutal Saturday night, still tasting last call, to meet my brother and a buddy at Bamboo Bowl. Place smelled like a random Saigon street at dawn: star anise, beef, mercy.

Nam greets you like his long-lost nephew, food flying out faster than JSN on a go route. Panko chicken? Crackling armor, juice running clear, begging to dive into the pho (just do it). Grilled pork/Thit Nuong with the caramelized edges and grill marks to prove it (again, dunk it and thank me later). BBQ pork/Xa Xio swims in this perfectly sticky sweet and savory red glory.

Then the pho. Chicken pho/Pho Ga rare order for me, but top notch. Combo pho/Pho Dac Biet, tendon like silk, tripe with snap, broth salted just enough to make you question every bowl before it, maybe even life itself. Chef Special Garlic beef/Pho Tai Lan wraps you in a warm, garlicky hug. Adds something to the broth that you didn’t even know it needed: a revelation that’ll snap you back into coherence. But the beef rib/Pho Suon Bo? Sweet mother of God. Falls off the bone like it just got off a flight from Houston. The fat from the rib seasons the broth into a liquid gold. Pro move: beg Nam for a beef rib garlic pho. Life-altering. It flies out the kitchen so get there mid week if you want a shot at it.

Portions criminally generous, prices reasonable. Nam’s generosity could feed a small village, actually probably has. Complete and utter WIN. Easily best in Snohomish county, and instantly in the conversation for best pho this side of the Cascades. Run, walk, crawl, who cares just get to Snohomish.

When I want Pho is the the only place I want to visit. The beef rib Pho is absolutely amazing. The owner found a way to make pho even more desirable. I have never had a bad dish here!

What’s makes great food better? Customer service!! The new owner loves to engage with his customers and he offers up the best recommendations. I love feeling like I’m dinning in someone’s personal kitchen.

My family had the Beef Bone Soup and it was delicious! The dish had lots of beef and the broth was delicious with clean flavors. The older man was very kind, generous, helpful and engaging. He made us feel like we were eating at uncle’s house. We’ve tried other dishes there and they are tasty too, but the beef bone soup is our family favorite.

New ownership. Best pho I have ever had! I got the combo as I love all the ingredients, tripe, steak, flank, tendon, etc. I’ve had a LOT of pho all throughout Washington State so I’ve got a lot to compare to. The broth was rich in flavor (someone came in to order the broth only to go during my meal, that itself says a lot). The tendon was cooked to perfection, soft and your teeth practically melt through it. All the ingredients tasted very fresh. I found my new go to pho spot! I hate doing reviews but I felt so compelled because it was so good.

Edit: I came back to try a new dish I’ve not had before, phở sườn bò, or beef rib pho. It was amazing!! I cannot recommend this spot enough. They also gave us a free yakult (not the yakult brand, but that’s what I know it as… probiotic yogurt drink) before the meal. Great for digestion.

I’m really disappointed to leave this review because I am a loyal Bamboo Bowl customer and have been for years, but I just ordered through Uber Eats and received a bowl full of 10 raw shrimp. I’m not sure how this happened but now I just have to hope I don’t get food poisoning

Absolutely incredible place. Pho is delicious, wings are crispy, the vermicelli bowl is so fresh too!! We come here all the time, the owner is so personable and sweet, and so is the rest of his team.

I hope they never leave, and if they do, it will truly be a tragedy. Highly recommend the Thai tea with jelly, the cafe sua da is SO good. And you cannot go wrong with the eggrolls here

I’ma die hard pho fan and major lover of Vietnamese cuisine as a whole. I’ve had many different phos in western washington. Bamboo Bowl doesn’t just compete in the pho world, it is in competition in the world of Vietnamese restaurants. While not typically an important selling point in most viet/pho restaurants, the service here is better than you’ll find in 99% of pho joints on earth. Nam is by far the most hospitable owner I’ve ever encountered.

The food was incredible. The Pho Dac Biet is amazing, the broth complex, rich and perfectly seasoned. The Pho Ga or chicken pho blew me away with its robust flavor. Marinated grilled pork was unbelievable considering it hasn’t reached its final form, still perfect for Banh mi. Beef Rib Pho is absolutely decadent and qualifies as a proper treat when you’re feeling up to it. His special garlic beef pho is one of the best iterations of pho I’ve ever had and is absolutely worth the try for those looking for something new.

In just a couple visits Nam has managed to make us feel like friends and even family. His prices are wildly reasonable as Nam and his family really set the new standard for service and hospitality in Vietnamese cuisine. Come for the food, stay for the man and his generous, funny and inviting disposition. Bamboo Bowl is a home run!
