Everybody at the restaurant is friendly and welcoming and, most of all, the sushi making technique of KAZUO, the Chef, is incredible.
You will think that it is a restaurant that specializes in sushi rolls because it’s called
“California Roll Factory”, but they actually serve traditional style sushi, with an artisan technique as well!
What makes them special is that they don’t do the “suteshari” method, which is when the sushi chef takes rice out of the rice container to make sushi, and then puts what they didn’t use back in the container. They don’t use this method at good sushi restaurants in Japan.

I’ve lived in Japan for more than thirty years and have been to many famous sushi restaurants, but even in Japan, it is getting harder and harder to find places that keep the traditional style like California Roll Factory does, so I was very surprised to find a sushi restaurant like this in Los Angeles.
I am very thankful and happy that it exists!
