My dad reached out to me a couple of weeks ago and said he wanted to do a big surprise birthday party for my mom. Originally he wanted to do burgers and hotdogs, but I told him I had a much better idea.
I reached out to Ruby and Miranda and told them how many people we would be feeding. Within minutes, Miranda responded with a price to feed everyone and it seemed more than fair. We discussed a pick up time and when I showed up today, everything was brought out to my car.
Everyone at the church loved the food!!! It was all so hot and fresh. I had many people asking me where it came from. The compliments just kept rolling in.
The steak, shrimp, and chicken fajitas were perfectly cooked. The doblados were full of juicy steak and melted cheese. The consome was still nice and warm and packed with flavor. Everything was perfect!!!
It’s obvious that Ruby’s amazing food is no secret in East Texas. If you happen to live under a rock and you’re looking for some great mexican dishes, hit up one of their many locations. Especially if you need catering for a large event. They can handle it.
The service was outstanding, the atmosphere is warm and welcoming, The portions are large, and the cost was mild. My daughter and I loved it and we will definitely be back with the entire family. ❤️
They have several locations in the area including food trucks! The food is inexpensive and they have authentic corn tortillas that taste yummy with any meats or just with the hot sauce! I can eat several with just some butter and a sprinkle of salt.
The breakfast tacos, though…
Over 4 visits, it has been hit-or-miss when it came to the breakfast tacos I’ve gotten from the Hwy 271 location. Today, I’m having some work done at my house & was on the way to Mexico Lindo (on Front St) & noticed I was about to pass this Lindsey Lane location & decided to get my food @ this Ruby’s.
I do not eat eggs or cheese.
I still am able to enjoy good sausage & potato tacos.
This was not one of those times, though.
At first glance, I wondered why are the tacos not made with shredded potato? I’ve NEVER had breakfast tacos made with frozen home fries. They’ve always been made with shredded hash brown.
Then the sausage was unappealing. Look at it…it looks like the bits left on the grill that were supposed to be trashed. I am well aware that there was no egg & cheese to hide, I mean bind, the sausage & potato, but usually the cook does an excellent job of showcasing the 2 ingredients present. Plus they costed me $5.95.
I don’t know if I have to find out who the cook is, on Hwy 271, that makes them great & only get breakfast during his shifts, or give up on Ruby’s breakfast tacos altogether.
