Stopped in for a bite while meeting some friends, much better food than I expected!
The chips and queso were really good, chips were a mix of sizes, great texture and crunch. Queso was different than I’ve had before, but in a good way. The cilantro was an excellent addition to the awesome cheese.

Got two bowls, steak and chicken, both equally delicious. Plenty of food, I don’t think either finished it.

I order the chicken quesadillas, they really hit the spot. Exceptionally prepared, the chicken had a great flavor, the addition of the guacamole was over the top.

If you’re near the area, definitely stop in.

Union Hall in Waco is a great spot with tons of food options—from gelato to chicken wings, sushi, and more. We chose to eat at Huaco Eatery (as shown in the pictures), and I have to say, the presentation of our meals was beautiful. The plates looked amazing and clearly had effort put into them. The food itself was good—not quite as bold in flavor as it looked, but still enjoyable.

The only issue I had wasn’t with Huaco Eatery but with the Union Hall building staff. As we were standing up and saying goodbye to our friends, a staff member came over and told us to take our trash to the bin. We already intended to, and we were literally still getting out of our chairs. I told her respectfully that she should give us a moment before assuming we were going to leave anything behind. It just came off as a bit rude.

That said, I won’t fault Huaco Eatery for that. They did an excellent job with presentation, and the food was fresh and well-prepared. Union Hall is still a nice place to come and eat, especially if you enjoy having lots of choices under one roof. I’d come back and try other spots here too.

The presentation of the food matched it’s flavor. From the passion between making sure the drinks are right with a fee sample, to ensuring the best ingredients go in the food. I will definitely be back again.

Tried one of the options at Urban Hall and was seriously impressed. The flautas were bursting with flavor, crispy on the outside and perfectly seasoned inside. But the real surprise was the rice: hands down the best I’ve had. The texture was spot on, and the toppings elevated it even more. Definitely a standout

I did not expect to eat so well tonight at Huaco Eatery when I was looking to catch a quick dinner just before closing. I was impressed with the quality and presentation of the food at this food hall, rivaling that of any restaurant. I had the most delicious ahi tuna lettuce taco, and I could but help go back after to try a fresh churro con cajeta. Chef Sebas clearly takes a lot pride in his work. Looking forward to future delights for my taste buds here!

Eating at Huaco eatery was my #1 best eating experience in Waco! While looking at the menu, the owner offered a sample of the chips & queso, & I immediately chose to eat here. The chips are house made & not overly salted. I chose a build your own chicken bowl, & it was absolutely delicious! The strawberry on top really added a unique depth of flavor that I was not expecting. You can tell the owner is passionate and loves serving only the best to his customers! Go check this place out! You’ll be glad you did!

EAT HERE IMMEDIATELY!!! No, seriously. Stop reading and drive here now! 🙂 Sebastian is seriously talented and needs to win a Michelin star for his incredible, delicious, flavorful, beautifully presented and creative food! He’s also hysterical on top of it. “Oh my gato!” 🙂

I had two lettuce wrap tacos: ahi tuna and grilled shrimp. I cannot believe how much flavor was packed into these. My husband had pollo flautas. They both came with a watermelon slice, covered in a cinnamon sugar. And the green pozole sauce! Chef’s kiss! We couldn’t stop talking about how incredible the food was.

And… the presentation also deserves a standing ovation. Definitely unexpected for a food hall.

THANK YOU, SEBASTIAN!!! I hope you get discovered by Michelin or James Beard!
